...As promised :-) Remember, you can add "brandy/rum" to the mixture or if you want to create your "own" fruit cake add: walnuts, dates, green and red cherries, etc.

BANANA-NUT RAISIN BREAD

1/2 cup margarine, softened*
1 tsp baking powder
1 cup sugar
1 tsp baking soda
2 eggs*
1/2 tsp salt*
2 cups mashed ripe bananas
1/2 cup chopped pecans
2 cups all-purpose flour
1/2 cup raisins

Preheat oven to 350 degrees. Spray with no-stick cooking spray a 9x5x3 inch loaf pan. Cream margarine; gradually add sugar, beating well. Add eggs (one at a time, beating well after each addition). Add bananas and mix until smooth. Combine flour, baking powder, baking soda and salt; add to creamed mixture, stirring just enough to moisten. Stir in chopped pecans and raisins. Pour batter into prepared pan (foil), place on top of a cookie sheet, and bake for 50-55 minutes (1 hour and 10 mintues for a regular loaf pan). Cool in pan for 20 minutes. Remove to wire rack to complete cooling.

*To reduce fat and cholesterol, low fat margarine, lite salt, and egg substitute (Egg Beaters, etc) can be used very effectively.
