I packed my sandwich fixings, carrots, an apple, brewed my coffee and then I forgot that my co-worker was bringing in homemade tamales which I've already eaten 2 of them. I also brought 2 boxes of granola bars to keep in my desk. I have my own grocery store at work with stuff in case I forget my lunch or need a snack.

Can we add something to this challenge for those of us who are sahps? How about a challenge to turn last night's dinner into a yummy, nutritious, cheap lunch for our kids (and ourselves)? I know it's so easy to reach into the freezer and pull out a frozen burrito, or heat up a hot dog, or (gasp) go get fast food or something. Why not instead take those leftover noodles and add sauce and cheese, or the leftover meat and wrap it in tortillas with salsa and cheese?

Here is what I did today:

I got frozen hot dogs out, yes, but by combining them with chili left over from a few nights ago, I made "scramble dogs," and the complete meal for the three of us used up only two hot dogs and two buns (and some leftover chili), meaning the rest are still there for another day. The kids loved their scramble dogs (my four-year-old was especially excited when he heard what it was called, and began begging me for his "Granna-dog" LOL). And, because the chili has beans and tomatoes, it was more nutritious than the hot dogs by themselves.
