My dd has inspired me this week with her willingness to try new foods, something which is typically difficult since she has autism. So this week, a lot of fruits and veggies, a few less snacks. She actually ate half of a turkey sandwich, turkey and all and i almost cried ibecause i was so happy. Funny thing, my grocery bill did not go up, and we are eating healthier (this week anyhow.) But man do I have a craving for some salty french fries LOL!!! Heather

I try and cook one meal a week that we can eat as leftovers for dinner or lunch. This past Sunday it was 4 cheese lasagna (I get recipes from allrecipes.com). DD always enjoys helping me cook, she mixes, she comments on how good it looks or how good it will be. Then we sit down to eat and she changes her mind, won't even try it. She loves noodles and cheese, there is nothing in the lasagna she wouldn't like. Oh well, one day she will eat something I have cooked. Meanwhile it was lasagna for me this week for lunch!

Your kid sounds like my kid. I think it's something about it being mixed together or "all squished together" like my DD says--she rarely will eat a casserole, but will eat the ingredients if they are presented to her separately on her plate. Go figure...

Two weeks ago, Kroger had Lean Cuisines on 1/3 off and I had 2-$1 coupons so I bought several and left them in the freezer at work. I only buy them on sale. Most are pretty good, but sometimes piggy me gets hungry way before dinner time. I brought apples, and salad too. So this week I have fairly cheap and easy lunches.

BTW, I bring my lunch at least 4X per week. I save time and money that way. I'm packing 2-3 school lunches every schoolday anyhoo.

I know how your DD feels, LOL! That could be me!

It drove my Mom crazy. "Lisa, you like everything that is in this. Why won't you eat it?!?!?!" "But, Mom, I only like them when they're NOT TOUCHING EACH OTHER!!!!"

Sad to say, I'm still pretty much like that...I hate eating what I term 'adult food.' I like basic meals. I figure if I'm hungry and can't think of anything to make, there's always Cheerios! ;D

Hopefully you'll have better luck with your kid!

I also made a big meal this weekend so we would have leftovers, our choice was ziti. I let me 3 year old picky eater help make it. She was so proud of it that she had to taste it and she loved it! I am going to try and make it a sunday tradition,(cooking with her, that is) if she makes it, she wants to try it.

I usually make dinner for four, even though there are only two of us, then we bring leftovers to work the next day. Today we have apples, and pork chops and stuffing that I made in the crock pot yesterday. I'll go to the grocery store and get some herbal tea and dessert today at lunchtime.
