Yesterday, I was wondering what $9 would get me at the grocery store. Usually, every thursday, I spend about $8 on stuff for my lunches to take to work. Yesterday, I spent nothing. I made corn fritters and mashed potatoes for dinner. Today, I will make spaghetti. I will hold on to at least $5 until tomorrow. I have to buy ice cream tonight because this is how I give my dd her medication. I want to see how cheaply i can survive by eating what is around. i am off this weekend and will rent a movie and go to a Christian music festival. Ramen noodles make me think back 10 years to when dh and I were dating (and broke). I kind of chuckled last night, because I am so picky when it comes to food. It would be awesome if $9 could get me through tomorrow too. : ) Everybody is pretty happy..no one cared that I didn't go shopping (not even me...too much.) My debt keeps going down and down...July, cc will be under $25,000. Anyhow,

I know, it's the best for when I come home from work Friday. I'm too exhausted to cook so I just lie on the couch with my oh so nutritious meal and watch the WB.
My favorite is Orville Redenbacher's Movie Theater Butter Light.
This may sound gross, but it's good...I sometimes sprinkle tabasco sauce (which goes really well if you're having red wine) OR grated parmesan cheese.
Hmmm..this gives me an idea for a post....

I actually still use one of those old hot air poppers and then melt real butter on top, sometimes I put seasoning salt on it, but parmesan or tabasco would be good, I'll have to try that one! :)

Ok here's the stir-fry recipe....a new twist on an old favorite!! =D
Of course you can alter and change ingredients to suit your taste. It's made with tofu, which I love, but you can replace that with chicken, pork, or beef and use different veggies, too, if you want.
It's really spicy but delicioius!!

Lo Mein with Tofu, Snow Peas and Carrots
Prep 15 mins
Cook 15 mins
Makes 4 main dish servings

2 pkgs (3 oz ea) Oriental-flavor ramen noodle soup mix
2 tsp vegetable oil
1 pkg (14-15 oz) extra firm tofu, patted dry and diced
6 oz snow peas, strings removed and each cut diagonally in half (about 2 cups)
3 green onions, cut into 2-inch pieces
1 ½ cups shredded carrots (about half 10 oz pkg)
½ cup bottled stir-fry sauce
3 oz fresh bean sprouts (about 1 cup), rinsed and drained

1. Heat covered 4-qt saucepan of water to boiling over high heat. Add ramen noodles (reserve flavor packets) and cook 2 minutes. Drain noodles, reserving ¼ cup noodle cooking water.
2. Meanwhile, in nonstick 12-in skillet, heat oil over medium-high heat until very hot. Add tofu and cook 5-6 minutes or until lightly browned, stirring occasionally. Add snow peas and green onions to skillet; cook 3-5 mins or until vegetables are tender-crisp, stirring frequently. Stir in carrots, stir-fry sauce, and contents of 1 flavor packet to taste (depending on salt level of sauce), and cook 2 mins or until carrots are tender. (Discard remaining flavor packet or save for another use.)
3. Reserve some bean sprouts for garnish. Add noodles, reserved noodle water, and remaining bean sprouts to skillet; cook 1 min to blend flavors, stirring. Sprinkle with bean sprouts to serve.

Each serving: about 375 calories, 18 g protein, 47 g carb, 12 g total fat (3 g saturated), 4 g fiber, 0 mg cholesterol, 1,485 mg sodium.
