Hi, everyone. Well, the computer is running, and I have a back-up external harddrive. Here is the Pizza Casserole Recipe:
Pizza Casserole
One and 1/2 lb. extra-lean ground beef, browned on stove with a little oil; drain
One box Kraft Macaroni and Cheese, cooked according to package directions
One medium yellow onion, chopped and diced
One medium or lg green bell pepper, chopped and diced
Two jars "Pizza Quick" traditional flavor sauce (in the spaghetti sauce section)
One package Hormel sliced Pepperoni
One package shredded Mozzarella cheese (not the low-fat kind)
Grease casserole dish with a little margarine or oleo. Preheat oven to 350 degrees.
Put the cooked macaroni and cheese in the casserole dish. Add the browned ground beef (a pound is OK), chopped/diced onion and green bell pepper, stir in the pizza quick sauce, and the pepperoni. Stir everything thoroughly. Cover casserole dish with foil. Bake @ 325-350 degrees for about 35-40 minutes or until bubbly. Sprinkle the Mozzarella cheese on top about the last 5-10 minutes until melted. Serves 6-8. Kids of all ages and co-workers love it. You could add Italian sausage (casings removed), but this is quick and easy. Enjoy. Whiz.

Hi, KL. You are welcome! Here is my mother's Belgium Salad Recipe. Cant remember if it was you who asked, since the computer crashed, I lost all data, so will include it anyway.
Belgium Salad Recipe
one medium can shoe-peg corn (white corn--Green Giant (?) brand
one medium can La Seure tiny party peas
one medium can French-style green beans (not frozen).
Drain above.
CHOP: one medium green bell pepper, one cup onion, one cup celery. ADD: one medium jar red pimentos.
BRING TO BOIL: one cup sugar, 4 Tbsp. cooking oil, 1/2 cup white vinegar, 1/2 tsp. salt, 1/4 tsp black pepper. Stir until dissolved in pan on stove. COOL COMPLETELY.
POUR: Pour the marinade-type mixture over canned and chopped veggies and mix thoroughly. CHILL OVERNIGHT. Serves 6-8. Easy, different salad. Have made it for work, family, fabulous. Enjoy, K. Whiz.
OMG--That sounds SO GOOD!! I'm in So CA and its supposed to be like 95 here today (ack! Don't remember the last time I had the AC going in NOVEMBER!) so I may run out and make this for dinner--quick chill it! I HATE cooking when it's SO @$&* hot!!

Just had to let you know that we had the Pizza Casserole for dinner tonight, and it was great--everyone loved it, especially the toddlers. But I have to tell you what happened, because it made me look so pathetic it wasn't funny!
Took out lb ground beef yesterday for dinner last night, but does anyone really cook on Halloween with three kids? Ended up with quesadillas. So today I printed your recipe and took a look in the kitchen. No bell pepper, obviously didn't have pizza sauce, but did have some pepperoni on hand! Found reg size jar of Ragu (not my normal brand) with mushroom and green pepper--aha!. Started boiling water for mac & cheese, chopped onion, put mac in pot, browned the beef...so far so good...remembered that I forgot to see what cheese I had on hand. Hmmm...colby jack, med cheddar, and six individual packages of string cheese, which is Mozz, of course! So I get the cheese grater and start shredding sticks of string cheese (left two for snacks), took what was left of colby jack (remember last nights quesadillas!) and shredded that. Mixed up casserole, put in oven for 30 min. Took out, covered with cheese, put in oven along with a defrosted (prev fresh) loaf of garlic bread. Waited ten minutes and served with a simple green salad!
I have to tell you, even with my necessary tweaking, it was really good! My 3 yo DD has gotten very picky, and when she FINALLY TOOK A BITE she kept saying, Mmmm, this is good!
There are five of us, me, DH, 15 yo DD, 3.5 DD, and 2 yo DS, and half of that casserole is left for this week's lunches!
