In an effort to curb our dining out, I have planned a menu for the next two weeks. Perhaps others would like to share their menus so that we can get some new ideas and maybe help others break out of their cooking rut.
Today: Freezer Meal
Fr: Tacos, seasoned corn, salad
Sa: Country Wine Chicken, pasta, veggies, salad, apple crisp
Su: Korean food
Mo: Pasta with red sauce, bread, salad
Tu: Turkey burgers, fries, salad
We: Potato soup, bread, salad
Th: Freezer meal
Fr: Pizza, salad
Sa: Whitefish and Linguine with lemon-caper sauce, salad, veggies, Coffee Frosted Cake
Su: Beef Burgandy, Rice, veggies, salad
Mo: freezer meal
Tu: Taco Style Lentils and Rice
We: Corn Chowder, Bread, salad
My freezer meals are meals that come from a cooking co-op that I belong to. We each make 6 freezer meals and then exchange them so that we have 6 different ones. This comes in really handy on busy nights. For the Korean food, I go to a Korean market and purchase the ingredients to make up a meal. It is so much cheaper than going to a restaurant and I can freeze any leftovers to make a meal for another night.

Our dinners usually depend on what deals I get on meat. As far as cheap meals, one of our faves is chili. I usually use ground beef or turkey leftover from a night of burritos or tostadas. I double the beans, sometimes using different varieties such as black and kidney and double the canned tomatoes. This makes more using less expensive ingredients. Also, I like chili on a baked potato or over spaghetti noodles and that really stretches out the leftovers.
I would really like to use the crockpot more but don't think far enough ahead most times.

I'm not her, but my stepdaughter absolutely LOVES Tatertot Casserole (or Tatertot Hotdish as it's known here in Minnesota, lol).
This is my DMIL's recipe, and I suppose it's pretty good,although I can't stand the stuff, :)
1-2 lbs. ground beef
1 C. chopped celery
1 chopped onion
1 can Cream of Mushroom Soup
1 Can Cream of Chicken Soup
2 lb. bag of frozen tater tots
Brown ground beef, celery & onion, Drain all the liquid off of that and mix in the 2 cans of soup. Put into a 9 x 13 pan, put the tater tots over the top and bake at 350 degrees for 30 minutes.
