I loved the thread about menu planning! I try to make a week's menu at a time, first starting with the grocery store ads and coupons. Then I gather all my cookbooks and recipe cards together and pick out meals we all like.
However, we are all a bit picky (DH being EXTREMELY picky), so my choices are limited. I occassionally check out a few cookbooks from the library and scour them for ideas, but rarely come up with more than two or three to try out.
Anyway, I will share my favorite recipes, in various categories and hope you will share too!!! I am SO looking for new ideas!!!!!!!

Easy Skillet Chicken Parmesan
6 tbsp. grated parmesan cheese
1 1/2 cups pasta sauce
1 1/2 lb boneless chicken breast
1 1/2 cups shredded mozzarella cheese
STIR 4 tbsp. parmesan cheese into pasta sauce
SPRAY skillet with cooking spray, heat 1 min. Add chicken and cook until browned. Drain.
POUR pasta sauce over chicken; turn breasts over to coat both sides with sauce. Cover and cook over med high heat 10 min or until done.
TOP with mozzarella cheese and remaining 2 tbsp. parmesan cheese. Let stand 5 min or until cheese is melted. Serves 5 - 6

Double-Crispy Chicken
3 1/2 C corn flakes cereal, crushed
1 egg
1/2 C milk
1/2 C all purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1 - 1 1/2 lb frying chicken pieces, rinsed and dried
2 tbsp. butter, melted
Measure corn flakes cereal into shallow dish or pan. Set aside. In small mixing bowl, beat egg and milk. Add flour, salt, and pepper. Mix until smooth.
Dip chicken in batter, coat with crushed cereal. Place in single layer, skin side up, in greased or foil-lined shallow baking pan.
Drizzle with melted butter.
Bake at 350 degrees for about 1 hour or until chicken is tender.
Serves 3 - 4

Creamy Chicken Alfredo (One of my FAVORITE sauces!!)
1/4 C all purpose flour
1 1/2 lbs boneless, skinless chicken breasts
1/2 teaspoon
2 tbsp. plus 1 tsp. olive oil, divided
3 cloves minced garlic
1 tbsp. minced onion
1 1/2 cups whipping cream
1/3 cup grated parmesan cheese
1/2 tsp pepper
1 tbsp. coarsely chopped fresh parsley (optional)
1. Preheat oven to 375. Place flour in shallow dish or pie plate. Sprinkle chicken with salt; coast with flour. Heat 2 tbsp. olive oil in a large skillet over med high heat until hot. Add chicken; cook, turning once, until golden, 2-4 minutes per side. Remove chicken from skillet; place in a 13 by 9 inche baking dish.
2. Heat remaining olive oil in same skillet over medium heat until hot. Add garlic and onion; cook until garlic is fragrant and onion is tender, 1-2 minutes. Increase heat to med high; add whipping cream, parmesan and pepper. Cook until sauce is bubbly and slightly thickened, 2-3 minutes. Spoon sauce over chicken in dish.
3. Bake chicken 8 - 12 minutes. Sprinkle with parsley.
Serves 5 - 6

CALIFORNIA CHICKEN ( in crockpot)
4-6 boneless skinless chicken breasts
1 cup orange juice
1/3 cup bottled chili sauce
2 TBSP. soy sauce
1 TBSP. molasses
1 tsp. dry mustard
1 tsp. garlic salt
1 small green pepper chopped
1 can (13 oz) manadarin oranges partially drained
Arrange chicken in slow cooker. In separate bowl combine orange juice, chili sauce, soy sauce, molasses, dry mustard and garlic salt. Pour over chicken. Cover. Cook on low 8 hrs- adding in green pepper and mandarin oranges during the last hr of cooking time. Serve over white rice. MMM Yummy! Even my picky family members like this!
Easy BBQ Chicken
Seriously-this is about my speed in cooking, LOL!
You need:
As many Frozen Chicken breasts as you want
A pan that you can lay them all down flat in
A Cover for said pan (tin foil is OK)
BBQ sauce
Pineapple rings/chunks/whatever
Non-Stick Spray
An oven (always handy)
Here's the big recipe:
Spray the pan with the non-stick spray; lay the frozen chicken breasts flat in it & cover with BBQ sauce. Put the pineapple rings/chunks/whatever over that, along with some of the juice from the can.
Bake covered at 350 degrees for 1 hour. If you're using thawed chicken breasts, you'd probably have to reduce the cooking time, but since there are days where I don't take the time to thaw anything, this works well.
We usually serve this with homemade bread.
