This is super-easy, and is my family's FAVORITE meal!

Beefy Noodle Casserole

4 oz. uncooked egg noodles
1 lb. ground chuck
1 (14-oz) jar pasta sauce
1 (8-oz) pkg cream cheese, cubed
1 Cup cottage cheese
1/2 Cup sour cream
1/2 Cup shredded parmesan cheese

*Cook noodles, drain. Place in lightly greased 11- x 7-inch baking dish.
*Brown beef, drain. Stir in pasta sauce.
*Place cream cheese in a 1-quart glass bowl, microwave 1 minute. Stir in cottage cheese and sour cream. Spread mixture over noodles. Spoon beef mixture over cream cheese mixture. Sprinkle with parmesan cheese.
*Cover tightly with plastic wrap, fold back a small corner to allow steam to escape. Microwave 6 to 8 minutes.

Thanks for the recipe. Was just making a huge pot of chili here and thinking about my cheap beef idea to share with the board.
My supermarket has prepacked meats as well as a butcher counter where they wrap to order. One of my favorite items is the 93% lean ground beef which sells for about $3 a lb., but if you go to the store at night around 7:30 they are cleaning out the meat case for the night and wrapping any leftover ground beef in pack that weigh between 3 and 5 lbs which they mark down to 99c a lb. When we see these we grab them and freeze for use later in spaghetti and chili and the like. The meat was ground fresh that morning and we've even asked to take what remains from them at 99c if we get there a little early and they are willing to do it if we take it all. If your supermarket has a butcher counter ask what they do with the leftover in the evening, they will probably suggest the best time to come back and get a deal.
