Hi, Aravis--Here's the chicken recipe as promised.

Parmesan Chicken

8 chicken breasts (skinless, boneless)
4 cups Ritz crackers, finely ground into crumbs with food processor
1/4 cup Parmesan Cheese (Kraft, or other brand) (or, 6 Tbsps.)
4 tsp. garlic salt, 2 tsp. seasoning salt
1/4 cup melted oleo or butter (I cant believe it's not butter)
one and 1/2 cups PLAIN yogurt (get the big container)

Combine crumbed crackers, parm.cheese, garlic salt, seasoning salt in bowl. Put plain yogurt in another bowl. Season chicken with salt, pepper to taste. Coat chicken with yogurt. Dip into cracker crumb/cheese mixture. Put in greased 9X13 casserole dish. Melt oleo or butter, drizzle over chicken. Bake @ 350 degrees for 45 minutes. Outside is crisp, inside is tender. Got this from coley on ivillage "cooking for seasons". Fabulous!

Raspberry Spinach Salad

Got this from a travel website on cooking (famous inns, hotels, congress recipes, etc. from a bed/breakfast in Hawaii ):

Ingredients
one lb spinach leaves, washed, stems removed.
one pint strawberries, fresh, sliced
3 kiwi, sliced
one jar macadamia nuts

Dressing:

1/3 cup vegetable oil
Two TBSP. Raspberry Vinegar
two TBSP. raspberry preserves (Smuckers, or other brand)
I double the dressing and put into a shaker container to mix it well.

Mix dressing and put in fridge for 15 minutes. Toss with salad and serve. DH likes it without the spinach, too. Whiz. Serves 4-6.
