HI, Aravis--As promised, I am keeping my eye out for recipes for you. Made this for work party, and OMG, gone in 5 minutes! The original recipe was from allrecipes.com, and I fine tuned it.

Chicken Salad Recipe

Two and 1/2 cups diced, cooked chicken breasts (I used 3 boneless, skinless breasts, and cooked on the stove in some veg. oil and drained.)
one cup chopped celery
one cup sliced (longways) RED seedless grapes
1/2 cup RED delicious apple,diced
3-4 green onions, finely chopped
1/2 tsp salt
One cup regular (Hellman's) mayo
1/4 cup heavy whipping cream in a carton (add later)
2 Tbsp. parsley flakes (chopped)
Dash of tarragon
Dash of red pepper flakes
One small bag of crushed walnuts.

Cook the chicken on the stove in some veg. oil. Drain and cool. Cut up chicken into cubes with kitchen sheers.

Combine all ingredients except the whipping cream. In a chilled bowl with chilled beaters, beat the whipping cream until peaks form and fold into mixture. Chill and serve. It is sooooo good, serve with crusty bread, or put onto lettuce. Fondly, WHiz.
