Tonight. I am making tacos. Why am I making tacos? I am making tacos because the kids will eat it, I have all the ingredients on hand and it is fairly cheap(not the cheapest but still). I believe for 4 people it will be around 10-12 dollars.
I took out the last of my ground beef this morning to thaw. I have a taco kit in the cupboard we got at Costco awhile ago(we got three in the package and this is the last one) (Oh Marie!! Do you get your check from Costco in Jan? We do and I am looking forward to it, can't wait to stock up there, how did your FPU thing go with DH?)Sorry, back to my dinner plans--I have tomatoes and green onions I need to use up and oh some sour cream, I have cheese on hand as well. My BF's mom makes salsa and gives us some so we can use that too.
There will not be left overs but I have some sandwich meat we need to use up so that works out.
Oh Kate: I made french onion soup the other day. I had not made it before. It was not the best thing I have ever made.....I think I can tweak the recipe, a litte less of something and little more of something else. I think a little less tyme and little more of something to make it richer tasting like worchestire sauce or port? Any ideas people? It was just a little blah. So you see Kate, not everything is perfect and BF would not take it for left overs!(but I did!)

Our kids love tacos too, we don't get kits though, DH has a bulk spice size of taco seasoning, we buy ground beef, soft and hard shells separate and he makes mexican rice, refried beans as well.
Since DH is back from Chicago land, I'll have to cook for both of us tonight.

I'm double cooking tonight because Dad will be late picking up the step-kids (who will have already eaten) so I'm making fish stick & mashed potatoes for the kids, then using the mashed to make a mini sheppards pie for Dad & I...kinda works out because I don't have enough fish sticks for all of us and then there will (hopefully) be some sheppards pie leftover for our lunch tomorrow or to leave for the sitter this weekend, because we are going out of town.
We're having tacos tomorrow...I have leftover meat that I froze from the last time and then some poached chicken so we're going to have 2 kinds...With 5 kids, I've found tacos is one of about 5 dishes that I can make that NO ONE complains about.
I wish we could eat vegetarian. I'm allergic to lentils & legumes & soy, so it kind of limits our vegetarian options!
I bet Kate could make soap from that LOL! Sorry Kate!
The beautiful, two-week meal plan I put together at the beginning of the month got completely trashed with my being sick (and not wanting to cook or eat) for most of it. I did get around to making a couple of the dishes I originally planned, but winged it on others in favor of recipes with the least time and effort needed. But I digress. :)
Tonight is leftover night, as DH is supposed to be out and about and it's just me and DD. We have leftover turkey breast (and two enormous wings), corn, couscous, sweet potatoes, rice, turkey meat sauce & pasta, and salad fixings. I have to go to the office tomorrow, so I think I'll finally do the crockpot coq au vin I planned on for last week.
Oh no, did you have that dreadfully stomach flu that was going around.
