Whats for supper?

Tonight is chicken legs again. I read in Marie's post that she puts lemon pepper on her chicken dish so I might try that to mix it up a bit. I have potatoes and I might do raw veges or some cooked frozen ones. I have not decided yet.
I don't know what to cook tomorrow, which is why I am posting as I might get some ideas. I do have a craving for pasta with meat sauce though. Although I don't have any more hamburger so that isn't going to work. I might try that french onion soup again and add some more too it for flavor.

Onion soup
Hi Kate,
This is the recipe with directions I am using. I am making some adjustments and I will list them at the bottom.
Ingredients
* 4 onions, chopped
* 3 tablespoons butter
* 3 tablespoons all-purpose flour
* 1 teaspoon ground black pepper
* 1 teaspoon white sugar
* 3 (10.5 ounce) cans beef broth
* 1 1/4 cups water
* 1/2 teaspoon dried parsley
* 1/4 teaspoon dried thyme
* 1 cup white wine
* 1 French baguette, cut into 1/2 inch slices
* 8 ounces shredded mozzarella cheese
Directions
1. In a large pot over medium heat, saute the onions in the butter or margarine for 10 minutes, or until onions are tender. Stir in the flour, ground black pepper and the sugar to form a pasty mixture.
2. Now add the beef broth, water, parsley and thyme and simmer for 10 minutes, Then add the wine and simmer for 10 more minutes.
3. Preheat oven to broil.
4. Fill individual oven safe bowls 3/4 full with the soup. Place a slice of bread on top of the soup and cover with the cheese. Place bowls in the oven.
5. Broil in the oven until the cheese is melted and bubbly
I am going to use red wine and worchestire sauce instead of the white wine. I am also going to use less thyme, about half. Other wise I like the recipe. Oh yeah, and I am going to use half yellow onion, and half red. I like red onions. Also, I don't have parsly but I'm sure that is ok to skip it. I used rye bread last time and it worked fine.(I just think you need a denser bread to hold the cheese on top)

I had the best fish ever tonight, and had to share! We picked up some white roughy at Trader Joe's, $4.99 for a 1lb package. Rubbed with a little olive oil, some fish rub seasonings, and roasted in the oven on 400* for 25 minutes - this fish was flaky and melt-in-your-mouth delicious, with no hint of fishy-ness at all. Yum!
With some green beans (about 1/3 of a $1.99 bag frozen) and leftover brown rice and couscous, it made a great meal for three for less than $6...and we have some leftovers for one lucky person for lunch tomorrow!
I also made this special tartar sauce, from a recipe I found online:
1C lowfat or canola mayo (or 2:1 combo of mayo and fat free plain greek yogurt)
2T capers, finely diced
2T sweet or dill relish, finely diced
1/2t dill
So, so good!
