Today is "Wasteless Wednesday" .... I try to do this every week- it's either leftovers or I make a soup out of whatever I can find in the fridge & freezer.
Thankfully this week we have leftover lasagna & pizza, so along with some veggies & bread we should have a decent (and almost free) meal.
What's everyone else having?
And does anyone have any (kid-friendly) suggestions for a pork roast other than roasting it or pulled pork?

You asked on the only night in the last month DH and I are going out.

I think we're going to make a cheeseburger macaroni casserole with some leftover ground beef we have in the fridge.
I actually made a stew in the crockpot this week with a pork loin roast: pork loin, carrot chunks, sliced onion and diced turnips with chicken stock, salt, pepper, garlic powder and thyme. At the end I took the pork out, cut in half, and saved half for later in the week. I mixed up a couple of tablespoons of cornstarch with some of the liquid in the pot, then stirred that in to thicken. Then I pulled apart the other half of the pork and put it back in the pot. We served it over noodles.
I'm going to make chili on Friday with the other half of the pork. Add tomato sauce, diced tomatoes, beans, corn, onions/garlic and spices, simmer for a little bit and it's done.

I'm doing boneless pork tenderloin with a salad and green beans or another veggie.

tonight we are having home made loaded baked potato soup with bread.
now i am hungry from all the suggestions. i was going to suggest chili as an option for your pork roast, as pp mentioned. pork chili is super yummy.
dinner tonight is at my parents house since dh is working late. he will have to fend for himself from the pantry when he gets home. not much help.
Oh my, that's my favorite..... I can smell it from here (sniff, sniff, sniff)

Thanks for the pork suggestions! Unfortunately, I am allergic to beans (all lentils, legumes, and peanuts...makes it fun to find economical meals), so the chili I think is out
That stew sounds good though, I might try it next week.
DH bought pork roasts because they were BOGO ... 2 warehouse packs (2 decent sized roasts in each pack). The first 2 I did pulled pork (with enough leftovers for lunches AND some went in the freezer) but bleh I don't really like pork, unless it's disguised with fruit...and DH REFUSES to eat any meat with fruit attached to it lol...good combination we are!
And THANK YOU for the reminder about potato soup. That used to be one our regular menu items, I can't believe I forgot about it! (And super good when it's -20 C outside...good winter food!)
I love the quiche idea. I dont ever eat breakfast, so not a fan of breakfast food. I could probably make mini quiches in tart shells & freeze them, then just thaw them out when I want one or two hey? My kids dont really eat egg dishes but I totally think I might do that for myself...

Pork, hmmmm. My kids love my left overs when I just put a touch of olive oil in the fry pan, slice the left over into the pan and add salt and pepper. You could eat it with jam or jelly to dip it in or put yours in the oven with a can of peaches. DH you could serve with a touch of tomato sauce and cheese melted over top.
I just graciously accepted a dinner invitation from bf's parents for a salmon dinner. My kids are going to eat it without complaint or I will simply kill them. LOL. I know the one DS loves it, the other one I am not so sure. I will warn the one before hand he must eat it like a big boy! If that doesn't work I will not let him have dessert and I will kill him. I have been craving salmon and bf loves it too!
Other than that, I need to go grocery shopping very badly. I had bacon out for supper and was going to get eggs. I will do a big shop tomorrow.
Is there a recipe for that potato soup being offered up?
