Weekend Meal Plans?

Today we are finishing the last of the caserole left overs for lunch.

I did a big shop last night and spent 11 more dollars that I wanted to but got a lot of food and a free lasagna with a coupon!

Tonight I am craving spaghetti and meat balls. I will probably freeze some of the meatballs I make for another time. There will probably be left overs for lunch the next day. I have some bacon out i need to cook so why not have bacon and eggs Saturday morning! Saturday night I have not decided what to make yet?

I think Sunday I will cook a ham and then we can have lunch meat for the following week for few days.

Marie I would love your pea soup recipe. Does it need a ham bone? I don't think my ham has a bone.

Ahh you made me smile - that soup was awesome!



  • Yep, one ham bone needed, with some meat still clinging to it is best

  • one bag dried peas

  • 1 med yellow onion chopped finely

  • 6 cups water (or fill that crock up)

  • 4-6 carrots peeled and sliced (I like a lot of carrots and it gives it good taste)

  • 4 med potatoes, peeled and cubed in bite size pieces

  • Pepper (do NOT add salt, the ham will naturally salt it, then you can add to taste upon serving)

  • 3-4 chicken boullion cubes, or 1 T powdered chicken stock

  • 1 cup diced ham (I like irregular chunks, makes it seem more homemade)

Put all ingredients in a crock pot except most of the diced ham, (you want that to have some firmness and not all be cooked down to much.)


Cook on high for at least an hour, then turn down and let simmer (with the top on the pot, KATE!) for at least 4 hours.

Tonight we're eating black bean enchilada casserole and salad. It's a repeat of Wednesday. On Wednesday I make two casseroles at the same time and the second one goes right into the fridge. It works out really well and it's perfect for Friday night because we're tired from the week and only need to stick it in the oven for 20 minutes.


Saturday night we are cooking dinner for my mom. I'm making a zuchinni tomato gratin, my SO is making mushroom risotto and salmon. I might try making vegetarian baked beans too. We'll eat leftovers and whatever's in the fridge for snacks and lunches on the weekend, breakfast always stays the same. Not sure when we will plan/grocery shop for the rest of the week ahead.

Well, the pulled pork chili I had planned for tonight (from Monday's crockpot leftovers) has evolved into pulled pork sandwiches. (No beans, no corn, low on tomato sauce...poor planning on my part LOL! But we do have BBQ sauce and hamburger buns. :-D)

Tomorrow night, I think I'll make salmon cakes - made them for the first time a couple of weeks ago, and YUM. Not sure yet about Sunday...I've got to trawl the circulars and plan for a grocery shop.

Tonight I'm making homemade pizza with veggies and I already have everything in the fridge and pantry I need to make it so no money spent!! Tomorrow night I'll be making baked ziti and I'll get at least 2 meals from that if not more. It's easy and cheap to make too and it's great winter comfort food. Serve it with salad and your favorite glass of wine and you're good to go!

Tonight is "Fun Friday" ~ so we're having tacos. (Leftovers will convert into taco soup or salad for lunch one day this weekend).
Tomorrow's breaky will be apple cream of wheat...trying to cut down on our cereal expense & use up some overripe apples.
Tomorrow night we're having roasted chicken parts and baked potatoes...then Baked Po Soup on Sunday (I absolutely can not wait for that!!).

i put a roast in the crock pot this morning with some bbq seasoning and sauce and we are having bbq beef sandwiches tonight with corn and potatoes that i already have in the pantry. it will also be enough for lunch saturday and dinner for me on sunday (dh does church stuff on sunday night so it's always just me for dinner). cereal for breakfast means the only meal i have to worry about for the rest of the weekend is saturday night (possibly sunday lunch, but that's usually with dh's parents, so it's usually a freebie). i have no idea what to make, yet. i usually do menu planning and grocery shopping on the weekend, so i will have to come up with a lot over the next couple of days.

the roast in the crock pot smells so yummy, though... i am drooling over it already. :)

Do you think it would work with beef? I am making a roast and its HUGE and there is just one of me :(


Also, what are dried peas? Is that the same as frozen? I have never heard of them before??? Thanks for the ideas!!
