I don't even know. I bought fish last weekend to serve tonight and ended up making it on Monday and the grilled cheese backup came out on Wensday and I have no clue what kind of meatless dinner I'm going to make tonight unless DH and kids want to eat air lol.
Tomorrow we'll have meatball subs for dinner. Only one kid is a little iffy on them and he's happy with a bowl of broccoli and meatball subs are so cheap too. Sunday may be oven fried BBQ chicken if I remember to thaw the darn chicken! Tonights the only night I have nothing planned because I have no other fish/meatless meals in my house. Maybe marinate some veggies then steam them and serve over rice? DH would kill me lol! I'll think of something!
tonight we have a pancake supper fundraiser, we are volunteering so it's free to eat! pancakes are a quick, easy, and tasty dinner!
i have venison from my deer that we will be making stew with tomorrow night (think beef stew). it will go in the crock pot in the morning and be ready for dinner whenever i am. it will also be lunch on sunday or monday...
sunday night- probably bacon wrapped chicken breasts with roasted potatoes and peas.
i also love to do exactly what norma is doing- make a big roast, and have it for 2-3 meals. it makes good roast the first night, bbq beef sandwiches the next. and if you still have some left, open face roast beef sandwich with mashed potatoes and gravy with it the 3rd night (this has a name, but i can't remember it...)
We call it hot beef sandwiches. We're doing the same thing! Roast tomorrow, hot beef on Monday.
Tonight was supposed to be Fun Friday - pogos (corn dogs) were BOGO last weekend...but DH got into them so I don't have enough. So I'm thinking of having a junk freezer supper - pogos, nuggets, "smiles", perogies, lol. All the stuff that is in my freezer that is not enough on it's own for a meal.
TBH, I want, want, want McDonalds. And I hate that crap. But I am craving fat, greasy, comfort food apparently. I haven't had it in so long....I only have 3 kids here this weekend so I seriously am considering telling DH to get some for supper tonight. Bad I know.. But I had planned on ordering pizza next Friday (pay day), and its a lot more when I have all 5 kids to feed. But I guess that's not the frugal idea you're looking for lol. Sorry.
My best frugal tip is to always keep a carton of beef broth & a couple cans of tomato soup on hand. (I home make chicken broth & always have some in the freezer). Beef broth can be turned into kitchen sink soup, a base for stroganoff or stew, a gravy for anything...etc... And tom soup can be used in casseroles, or dressed up...my kids love when I make it into "taco soup". Our just good ole tom soup & grilled cheese. Perfect for nights you really really dont want to cook.

Last night DH made homemade pizza, he's been experimenting with sauces and crusts and this one was the best one yet.
Tonight I had a 1/2 sliced ham in the freezer and scalloped potatoes and ham are in the oven and then I cut up the rest of the ham, some potatoes and other veggies to put into the crock pot for a white bean and ham soup for tomorrow evening.
I had gotten a HUGE 10-12 pound pork loin on major sale last month, and cut it into four big chunks, individually wrapped in the freezer.
Tonight, we are having crockpot roast pork with mashed sweet potatoes, broccoli and gravy. I cut the roast in half out of the crockpot and will use the rest for BBQ pulled pork sandwiches on Tuesday night, complete with cole slaw and collard greens.

A chuck roast will go in the crock pot Saturday morning with some carrots and potatoes.
