Recipe Ideas - Pork Chops?

I am putting in a meat order later this week. Unfortunately, the package that is most frugal (I can get the most meals out of it) involves 7 lbs of pork chops. And they're end-to-end cut.
I'm trying to plan my menu for all of March to see if I can cut down some of our food budget...I did awesome this month cutting it down!
But I really don't like pork unless it's pulled pork sandwiches lol. So I have no idea what to do with the pork. The last time we ordered this package it was summer so we bbq'd a lot - that's not an option now.
Besides plain old fried or with mushroom soup (can't do that cuz I'm allergic to something in it!), what do you do with pork chops? I was thinking I could cut some into cubes & make sweet & sour pork, but I don't know if that will work?

does your family do spicy food at all? i love smothered pork chops, but the way that i make them they end up on the spicy side. this is the recipe that i started playing with years ago- it's a good base recipe. it's not spicy from what i can recall, but i add some additional spices to it now- more cajun seasoning and some herbs de provence (or italian herb blend). if i have any in the house- i also add bacon (cut small and brown, drain, then add to the pot), it's a pig trifecta!

i also do a version of pork parmesan, like chicken parmesan, but with pork chops. serve with a side of spaghetti marinara and garlic bread.

Thanks everyone for the ideas, definitely gives me some food for thought (ha ha.....)
Half my problems involve my DS being allergic to food dye / colour - so no shake n bake, no cheddar cheese, etc...and then my own allergies (the mush soup is part of a soy allergy) AND DH hates fruit with meat. Which I'm about ready to tell him too darn bad lol.
But I have done pork chops in corn flake crumbs before I forgot about that, it ends up being similar to shake n bake.
Prtyinpink - I just wanted to add that we don't do beans/legumes/soy as I'm allergic but that's a great way to cut things down too. I.e. you could do a tex-mex rice dish with beans & your seasoning. A meatless dish each week.
And FYI - You can peel the overripe bananas and throw them in a freezer bag, freeze until you have the time to bake. I do that when we get to the end of blueberries etc also - even if there's just a few you can throw them into smoothies, muffins etc.
(Drives my DH batty though, that I have these bags of "stuff" in the freezer lol)

Noticed your comment on freezing fruits. Just had to mention what I ended up doing a couple weeks ago when they had that big freeze down in FL. the local grocery store had a crazy deal on oranges. they had them marked down to $2.48 for a 4 lb bag BUT then they had a coupon so you got them for $1.25 for 4 pounds. Mind you since I go for the small oranges this meant about $1.25 for 8 or more oranges!
