I tried 2 new recipes this week 1. Stuffed zucchini. Cut zucchini in half length wise and hollow out the middle. Cut up what you have scooped out. Add some mushrooms, cut finely. Stirfry the zucchini and mushrooms in oil for a few minutes. Add some chicken broth and reduce. Add enough bread crumbs so it sticks together. Spoon mixture into zucchini, top with some cheese (I used parmesean) and bake at 350 until zucchini is cooked.
2. Lentil soup one can of lentils one cal of tomatoes onions, celery and carrots cut finely.
When I make it I use a package of macaroni. Cooked in salted water and drained. Then in the pot where the pasta was cooked and drained add stewed tomatoes (or crushed or diced whatever you have on hand) usually a can will do fine. Depends on your preference and how much macaroni you made.
Minestrone soup:-) the grocery store here has precut vegetables fresh to go in packages. ironically its cheaper than buying all teh stuff separately....found some steaks on sale an go tthe ingredients to make my own bread..Yummo!!

My receipe is the same, except I drain the macaroni before it's completely done, so it soaks
