Too Tired?

This post is sparked by what Kate said in another post about being too tired to cook.

I am often too tired too cook. Also, I do not have access to fast food or restaurants as we live rurally.

I know that today I have a parent teacher meeting to go to after work. So after working for a full day and going to the meeting, I won't get home until 6 ish. So last night I took out some portioned hamburger(we get huge trays of it and I freeze it into bags in about 1 lb portions so I can just grab 1 or two depending on what I am making). When I get home I can throw the hamburger into the fry pan and use the taco kit I have. Chop up some tomatoes why the hamburger is frying and rip up some lettuce. Supper is served in 10 min. The only problem with this meal is there are no left overs. However, I have some sand which meat and bread that must be used so that works.

I also have pre made pizzas in the freezer I could grab if the need arose. Also freezing pasta sauce(plunk in a pot to defrost) then boiling noodles and throwing a salad together works. I have also been known to bbq things frozen LOL.

What do you guys do when too tired?

I always keep an emergency feezer meal on hand for the tired days. I know they aren't as healthy and a little more expensive but a tray of frozen salisbury steaks or lasagne has saved me on many occasions. I also love to make tacos. I usually buy tortilla chips or crunch up hard taco shells so the next day DH and I can have taco salad for lunch using the leftover meat and veggies. Also if I know I'm going to have an especially busy day (like your about to have) I break out the crockpot and let dinner take care of itself.

Yeah Yeah I hear you. My sister calls it brupper! Breakfast for supper. I have done this too, eggs and breakfast sausage, throw a couple of baby carrots on there for health food reasons LOL!

Good idea!

Thursday nights always seem to be the night that I run out of energy and want one of my lazy meals to fix.

You mentioned in previous post that your daughter is unemployed, and is struggling with some health issues, however, unless she is totally incapacitated, why can't she take over dinner preparation? It is not heavy duty chore (like washing floors) and may even make her feel more "useful" and is contributing to the household.

What a day for this thread...I'm absolutely exhausted today.

Normally I plan ahead - make extra mashed potatoes on the weekend so that I can make sheppard's pie during the week, the slowcooker is my best friend, and frozen pizza and hot dogs&KD are my life savers. Not the healthiest, but I throw some real cheese in the KD and try to sneak in veggies lol.

This week I'm exhausted. I planned ahead enough to use bisquick to use leftover easter ham, but that's it. All I have on hand is beef sausage and I haven't the faintest clue what I'm doing with it.

Is it in links? If so make bangers and mash. So cheap and easy. Let me know if you need the recipe.

Great post!

I like the pre-frozen tricks some of you use.

My go-to is either a "fend for yourself" night or quick mac-n-cheese, one of those frozen steamer veggie bags and garlic bread.

I try and keep frozen pizzas, skillet meals, and some odd frozen dinners on hand just in case.
