I found a mix called Pamela's. It's like Bisquick but is gluten free. I LOVE pancakes, and since the diet is new to me, the thought of experimenting a lot and making my own mixes is really daunting. This is a little pricey but it gets rave reviews, and she also offers a website w/ recipes and newsletters.

Thanks for the review, I appreciate it. When I was just out of the hospital I really wanted pancakes but something told me to wait. I am glad I did, I think I would have ended up right back in hospital. I can't wait for this mix to get here (I got it on Amazon, lol) so I can have my pancakes!

Whole Foods has a lot of ready made GF bakery items. I have had the chocolate chip cookies and apple pie. Both were really pretty good. They are better warmed up. I used to bake a lot, but not so much in the last 2-3 years.
