Here's Bette Hagman's sourdough bread

Just thought I would share this with all of you!

Recipe came with Westbend Bakery Style breadmachine.

Bette Hagman's sourdough bread (The gluten free gourmet - revised edition)

>> Sourdough starter:

2-l/4 tsp dry yeast granules

l cup of lukewarm potato water

l teaspoon of sugar

l cup white rice flour

Feed:

l/2 cup warm water

3/4 cup rice flour

In a l quart mason jar dissolve yeast granules, water, sugar and flour. Stir down every few hours for the first day and it's ready for use on the 2 or 3rd day. Replace/feed as used with l/2 cup warm water and 3/4 cup rice flour. Sit on counter all the time, loosely covered.

>> Bean flour mix:

2 cups garfava bean flour

1 cup sorghum flour

3 cups cornstarch

3 cups tapioca flour

Makes 9 cups only.

Set aside l-l/2 tsp instant yeast

In a bowl stir together:

2 cups bean mix flour

1-1/2 tsp xanthan gum

l/2 tsp salt

1 tsp egg replacer

1 tsp unflavoured gelatin

l/3 cup dairy-free powder

3 tbsp sugar

In another bowl mix:

l egg, plus

l egg white

l/2 tsp vinegar

l/2 cup sourdough starter

3 tbsp oil

l cup warm water(more or less)

Whisk liquids together and pour into breadmaker pan. Carefully pour flour mixture on top, totally covering the liquids. sprinkle yeast on flour, don't let it get wet!

Set machine for l-l/2 lbs loaf, light crust, white or specialty loaf. Scrape the sides down during the initial mix.

Load your machine according to your breadmaker instructions.
