Summertime potato salad....

5 eggs(optional)(some people are allergic or don't like them)
4-6 T pickle relish
1 med onion diced
1 C G.F. Mayonnaise
1/3C evaporated milk(lactose intolerant--leave out)
salt and pepper to taste.
Boil the potatoes and eggs together in salted water until potatoes are done. Drain and set aside to cool completely. Dice the potatoes and 4 of the eggs. Layer the salad with the potaltoes, egges, pickle relish, onion, salt, and pepper. Stir gently.
To make the dressing: Thin the mayonnaise with the milk and add the mustard. Blend well. Stir into the salad gently. Top with the last egg, sliced, and sprinkle with paprika if desired. Cover and refrigerate for 8 hours or overnight.
Makes 8--10 servings
