Both are lovely classics, but a bit common for me, especially Kate (as it is a nn for Katherine, Kaitlyn, Caitlin, Catherine, Katerina, Katrina, etc.) So Sarah GMV as default.
If you like the feminine classics, how about considering one of these (a little less common):
I like both a lot -- even have a Kate myself -- but went with Sarah simply because it gives her more options than Kate as a given name does. Sarah could also go by Sadie, Sally, Sal, Sari, etc., while Kate is just Kate (or Katie, when she's young, but that doesn't even seem to suit my five-year-old).
Also, since you like the simplicity of Kate, have you considered the Sara spelling? Just a suggestion. ;)
