I voted for Gavin John for two reasons:
1) I love Gavin. It's a long-time favorite of mine. And I think the combination Gavin John has a great flow. Overall, a great choice.
2) Jackson John is so repetitive it sounds comical. Since Jack is a (very common) nickname for John, this name really reads "John's son John". It's like naming your child John Johnson or Rick Richards. It's the kind of combination that makes people snicker, and I know that's not the reaction you want. If you like the nn Jack, and that's why you are considering Jackson, I would recommend calling him Jack as a nn for John. You can do this with John in the first name or middle name spot. I don't know why you can't use Nathaniel, but maybe you could use it if it were the middle name. You could use John Nathaniel nn Jack. If you still can't use Nathaniel, there are tons of other names that yuo might love that go well with John (luckily, it flows well with just about everything).
I agree with Annie about Jackson John being too repetitive, and I also find Jackson really trendy. I like Gavin a lot.

Annie already said it all. Gavin John would HAVE to get my vote, as the other combo was quite literally "John's son John." Since John is a family name you and your dh would like to use anyway, and you obviously do like Jack, the simple solution seems obvious ... name him John, call him Jack, come up with a mn you both like. ;)

I voted for Gavin John, not because I am particularly fond of the name Gavin, I actually love the names Jackson and Jack, but Jack is a common nickname for John, so the name Jackson John is too repetitive to me.
Some other suggestions using John as mn: (I am using "trendyish" names in the suggestions as both Gavin & Jackson seem "trendyish" to me)

I don't see how you can even consider Jackson John, given that Jack is a nickname for John - also even if that were not the case, it sounds terrible together with the two Js, and there's no good flow to it
