Here are my thoughts on these:
Carly-I really can't get into this one.
Chelsea-That's nms. Way too cutsey for a grown up too, imo.
Elisabeth-This got my vote. It's a feminine classic, with so many fun nn options.
Lainey-Cute as a nn or maybe Elaina?
Lee-That's kind of boring, but I'd at least spell it Leigh for a girl.
Rory-I don't mind this for a girl, but since it's so unisex, how about something more feminine w/Rory as a nn like Aurora or Lorelei?
Victoria-Actually, you could do Victoria nn Rory if you really wanted to.

I've noticed that nobody really likes Lee. Lee is actually my middle name, my dad's middle name, and my grandmother's middle name. I would also like to use it as a middle name for a future son or daughter. I was just wondering how everyone felt about it without knowing the significance behind the name. It's actually DH's mom's middle name as well.

With all of those family connections - I would definitely tie it in somehow...
I think it's great as a middle name, but I would not use it for fn. If you did want to incorporate it into the fn, there are plenty of options besides just Lee, such as: Leanne or Leanna, Leah, Leandra, Lela (I know a high schooler w/ this name pron. like LEE-la), Lena, Lenore or Lenora, Leonora. I'm sure there are plenty of others, if you did a separate thread for names using Lee I'm sure there'd be lots of response.
