I made a low carb Lemon Slice yesterday that turned out really yummy...I don't know the carb/cal/fat grams.


Crust:


1c nut flour (I used almond)


1/4c melted butter (NOT margarine)


1/4c Splenda


Pinch of salt


Mix and press into 9x9" pan, bake at 350F for 10 min.


Topping:


3 eggs


1c. Splenda


4 tbsp lemon juice


Mix well, and pour over crust. Bake 20min at 350F.

Of course you can grind the nuts in a food processor or even a coffee bean grinder, but you can also buy various ready-made nut flours (I get mine in a local health food store).

That reciepe sound really good. I have to learn to create desserts that are made without wheat. It's gonna be challenging.

Oh, what is Splenda? Also do you grind the Almonds down really fine like into powder?

Splenda is a sweetener made from real sugar but without calories. And, yes, the almond flour is very fine, just like wheat flour...but even a coarser grind would work for the crust (it would just be crunchier).


My mom recently found out she is a celiac, and has to stay away from almost all grains, so she's giving me good ideas to use in place of wheat flour. I'll get her to give me a bunch more dessert recipes, and I'll post them!
