Good afternoon to all. Had a great walk in these marvelous late Summer days we are having in the Midwest. Must do a little laundry, water some outdoor plants, then settle in to read in the shade for a while. This is my reward for being stuck in during weeks of hot/humid weather - LOL.
Making pot of veggie soup letter with lots of fresh summer veggies. I shred yellow zucchini and it takes the place of noodles and thickens the soup a bit.
Today is day #1 of my millionth try at this again. So far, so good. My eating is perfectly on plan and I went to the gym. I'm hoping this try will actually be it (LOL, haven't we all said or thought that at one time!!) because we are done with all the fairs, summer is almost over, no more camping (which means no more of my mom's food, just our on plan menus)and school is starting.
I just had my 20th high school reunion and had a great time. I didn't like being fat (Bruce actually said "I felt bad for you...last year you looked so good and this year was your reunion"). It hurt, but I knew how he meant it. He didn't mean for it to be as bad as it sounds. Anyway, seeing everyone was very motivating as well. Just about everyone looked like that just stepped out of high school and looked very good. I want to get back to that now too.
I am now about 2 months that I have been off the medication and am hoping that I can start to lose weight again (even if they were only a physicological aspect of the gain, but I don't think they were). Both of my knees feel better...I can actually walk the stairs in my house without crawling now and have even started to get that bounce back into my step as well. I would LOVE to start running but I just know that my knees would never be able to handle that much.
Please buddies, send me powerful, stay-on-track vibes! I really need them. :0)
Isn't it wonderful that it's football season!!! I was in your neck of the woods last week! Well, in Wisconsin at least. We went to the Dells for 3 days and had a blast! That place is so much fun and Wisc. is so beautiful!!!...too bad it's the home of the Packers!! (LOL...ooooh, that was a low blow...sorry!!)
Soup is pretty simple, mostly stuff I have growing in the backyard - wish the green beans were still producing. The secret is in sauteing some of the veggies first to bring out their flavors. Much as I like carrots, they are too sweet in a soup. Pretty low carb, but you could add brown rice. For an exotic, smoky taste, add 1/4 tsp of sesame oil. Here you are -
Saute in 2 Tbsp olive oil until almost translucent- 1/2 large or 1 medium onion, peeled & chopped coarsely 2 stalks celery, in 1/4" slices 1 sweet pepper, coarsely chopped 2-3 large garlic cloves, peeled & chopped fine 1 large green zucchini, cut in 1/2" pieces
Add - 1-2 whole tomatoes, chopped coarsely (or 1 can chopped tomatoes) 1 lg yellow zucchini, shredded 2 cups low sodium chicken or vegetable broth 1 box of whole mushrooms, rinsed & sliced
