One thing that happens when Karen is away and she always seems to hear about it while she's away (sometimes not till she gets back), is how we buddies always well....sort of get out of hand, a little mischief here and there, you know, kind of like when the parents are out of town, the kids .... sort of act like kids...LOL

Don't look now, but I just wanted you all to know I noticed that the message board has recently been toilet papered with red and green paper. I don't know who did it, but it sort of looks good if I do say so myself. LOL

I sure hope nothing else like this goes on while our wonderful CL is away - relaxing ...

Not much mischief going on here. The snow has been cleared from the main streets, so I went to Curves for a workout this morning and dropped my stack of New Years cards in the mailbox on the way. Before I left, I made a pot of Mexican chicken soup - chicken breast, chopped peppers/onions/celery/carlic, can of diced tomatoes, chili powder to taste. Threw in some frozen corn at the last minute. Very filling, very low cal.

Need to get a shower, then run to local natural food store for bulk granulated Stevia sweetener. It's so much cheaper there. They also have great sourdough bread with hard crust, so we are having turkey Italian sausages sauteed with sweet peppers on the bread for supper.

The Mexican chicken corn soup sounds delicious! What do you use as a base, chicken broth? I made beef stew from left over pot roast from the night before. No potatoes. Just lots of veges and I use diced tomatoes with green chillies. Do you like green chillies?

Oh, I was just trying to stir up some "virtual" fun around the place. It was just getting too quiet with Karen gone to visit relatives over Christmas and New Years. I'm not sure when she'll be back even, we'd better get some feedback, we don't want the place to be to, to bad when she gets back. LOL

I moved out when I was 17, so I didn't really even live to be old enough to pull a fast one on the folks. I've always been independent and not rely on family for too much. It's made us stronger as a couple, and my kids are just the oppposite, home bodies. I don't know if I'll ever get them out of the house. LOL

I went for my walk today and thought my face would freeze off on the way back. The wind was just blowing so hard. My daughter was with me, and I warned her to dress warm before we left, but I got that "oh mom" look. I'm old enough to know how to dress myself. So...... I let her wear "whatever" and she was a frozen popsicle by the time we got home. Teenagers. LOL

My soups are more like stew, so I just added 1/2 can of water after I dumped in the diced tomatoes. When I was sure DH didn't want any, I added a small can of green chilies. Perfect - hit the spot and filled me for hours. If I had some corn tortillas in the house, I would have torn up a few & cooked with the veggies. I call it tamale soup.

Beef stew from leftover roast is the greatest. I found potatoes & green beans together in a can and use these, along with carrots. Beef & chicken broth (low salt version) in the box is becoming a staple around our house. I cook rice in it and the taste is so mellow.
