How to find a therapist?

I think I need to find a new therapist. The one I've been seeing for 3 months has been ok, and certainly has helped, but after reading some websites about ED, I'm not sure she is as specialized in ED as I would like. The websites I read taught me more in 10 minutes than I've learned with her the entire time. She has also condoned a lot of practical attempts to control this, like calorie counting, more exercise, no sugar, etc. Which I liked, but doesn't really get to the root of it all.
Ideally, I'd like to find a Christian therapist, but I have no idea how. First of all, they have to be on my insurance, because I can't afford it otherwise. Secondly, I am Catholic, and Catholic churches don't really have that kind of resource.
I looked at the list of providers covered on my insurance and I don't know how to pick one. I think I want a female. But most seem to have a degree in philosophy or a masters in social work. Are they qualified? One is an actual psychiatrist, but that makes me nervous because I don't want to be treated with medication. How do you pick one? Does anyone have any advice???
