I like the way you cut and packed the chickens, but Where is the tenderloin on the bird.

When you cut the breast meat from the bone, it is behind the thickest part of the breast. It will usually separate a bit from the breast fillet. It has a white ligament sticking out the top. This ligament connects to the wing. I scrap my knife down the ligament to remove it. The ligament makes the tenderloin tough. I learned this from Julia Child. Years ago I rented her video on how to cut up a chicken.


If I didn't explain myself well enough, just go to the meat dept at your store and look for the tenderloin pieces, either fresh or frozen. You will see the ligaments sticking out. I like to make my own chicken strips from the breast fillet instead of trying to remove the ligaments from the store bought tenderloins.
