I am SURE that there is a postaround here with ideas for leftover chicken BUT I can't find it. I am sorry!!
I am looking for ideas on what to do with leftover chicken - I roasted a chicken today and we have TONS of leftover chicken now. I know I can make chicken pot pies but I have to find a recipe for it. Can we freeze those? Can I freeze the leftover chicken plain? Any other ideas would be really appreciated.

Chicken pot pie (super easy)
1/2 meat from roasted chick.
1 can cream of chick soup
frozen veggies of your liking (corn, peas, hashed brown potatoes, etc)
frozen pie shell
mix meat with soup and veggies. place in pie tin and top with pie shell. Bake at 375 until inside registers 120 or so (since the chicken is already cooked).
There is an entire cookbook called rotisserie chicken t the rescue wth great recipes for cooked chicken,
I also make chicken paella
1 or 2 packages Vigo brand yelllow rice mix (99 cents each)
chicken meat from 1/2 roasted chicken
1/2 cup bell pepper diced
1/2 cup diced onion
Follow the directions on the back of the package adding the onion chicken and veggies with the rice mix. (takes about 30 mintes to cook)
These are both a HUGE hit with my family!!

When I have a lot of leftover chicken, I will break it up into 2 cup portions and freeze it in baggies. The portions are easy to thaw in the fridge and you can use them in all kinds of ways... chicken salad, chicken pot pie, chicken tetrazinni, chicken enchiladas, barbecue chicken sandwiches, soup, casseroles... you name it.
