Whats for Dinner this week?

Sunday: Pot Roast

Monday: Leftover Roast Casserole with Salad

Tuesday: Grilled Salmon with Pineapple Salsa with Salad

Wednesday: leftover from monday and Tuesday and some veggie

Thursday: Spaghetti

Friday: noodle Soup and grilled cheese with salad??

Saturday: Cheese and egg dish with grits

Mon - chicken enchiladas, black beans

Tues - Baked potato and chili

Wed - Grilled cheese and tomato soup

Thurs - DH and DS out of town for the rest of week.

Sunday - Chard, black bean, tomato and veggie sausage soup from freezer.

Monday - Roast whole chicken, roasted carrots and parsnips, salad.

Tuesday - Homemade pizza and raw veggies w/dip

Wednesday - Baked lamb chops, brown rice, asparagus

Thursday - Soup and sandwiches or breakfast for dinner

Friday - Cuban black beans and white rice, corn, salad

Saturday - ??

this is another week of cleaning out the freezer and cupboards because I want to use up we have before doing a restock of both

Tuesday: ham and waffles (ham leftover from Saturday)

Wednesday: chicken in crockpot

Thursday: cheesy brats/hot dogs

I sat down today and made up 2 weeks' worth of menus. I focused on using up things that I have on hand so I can avoid a big Aldi's shop until Feb. We should be able to get by with only needing milk, bananas & grapes.

Rice & Black Bean Bake w/corn chips, tropical fruit salad--I'm getting back in the habit of using dried beans. I've had a bag of black beans forever but had gotten lazy and have been using canned instead. No more!

Hash Brown Egg Bake--I'll cut the recipe in 1/2 to use up a partial bag of frozen hash browns.

Roasted chicken, potato wedges

Black Bean soup (in the freezer)

Spaghetti Pie (using leftover spaghetti in the freezer)

Frozen pizzas & fruit--Something quick for Pinewood Derby night.

Manicotti (from upcoming Angel Food box), homemade bread

Other sides will include canned or fresh fruit & a variety of frozen veggies. (I have lots of the veggies from the past few months of Angel Food boxes.)

Sunday - whatever since we ate lunch out today

Monday - Corn and spinach enchilada casserole(crockpot), Spanish rice

Tuesday - 15 bean soup(crockpot), corndog muffins

Wednesday - Rotisserie chicken(crockpot), mashed potatoes, corn

Thursday - Baked ziti, salad

Friday - Turkey burgers, broccoli

Saturday - Tilapia in foil, red potatoes, carrots(all in crockpot)

I love using my Crock Pot, and have been trying out recipes from the 365 days of crockpotting blog. Most have been really good.
