I enjoyed watching these videos and hearing the stories from this 93 year old woman. She has made several videos of depression cooking.

I wish that my Grandma was still alive so I could hear her stories again.

I love Clara! She cooks like my mom did. (My mom was born during the Depression and then learned to cook with rationing during WWII.) We ate potatoes at every meal... not so healthy, but cheap!

Actually, potatoes are very healthy. It just depends on the way you prepare them. Slather them with butter or oil, and yeah, they're horrible. But potatoes themselves are fat free, and one only has just over 100 calories. They also are high in vitamin C and potassium.

I know potatoes are, themselves, healthy. But I don't like plain potatoes... butter, gravy, something's got to be there to make it tasty and that is my downfall. Guess I shouldn't blame the poor potatoes, huh? :-)

I Knew there was a reason I left the skin for mashed potatoes. LOL I love mashed potatoes and gravy,yum yum. I make mine with sour cream, milk, butter, and gravy. So your not you only one with unhealthy potatoes. But if you leave the skin it can some how counter act the other stuff to make it healthy. Okay that was a lie, but funny. :0

I think homemade real potatoes, with real butter, etc. are far healthier than a Happy Meal from McDonalds! Gotta get a different perspective--don't compare them to healthier food. Compare them to worse food--see how much better potatoes just got?

Mmm...potatoes. We do a lot of rosemary potatoes panfried in olive oil. That's healthy, right? Although DH much prefers when I make potatoes au gratin ;)
