BTW - can you rely on the messages on packages that say 3g NET carbs? Does sugar alcohol really not affect your BS levels? If this is true then the Atkins ice cream is a real find. But I hesitate to get my hopes up.

You know I would think that it would affect your blood sugar since sugar does and so does alcohol. How ever I have no idea on this one at all, but sure would love to know the real answer to it. Who knows these days, because I don't always agree with what the packages say about their carbs especially with what all is in some of the foods I have read. I guess it is just a matter of trying it to see if it does anything, but just in a small amount and than see what our blood sugard do after having it.
Hopefully somebody else can help us out on this one. I sure hope it doesn't, because than you have found a great deal for us all with some delicious ice cream. Yum! Do let me know if you find out if nobody has no answer to it, because I am so curious now about the sugar alcohol. Take care and do have a splendid day!

Sugar alcohols effect your blood sugar more slowly than regular sugar. They are made from a sugar. Mannitol for instance comes from milk sugar. The sugar alcohols are mannitol, sorbitol and xylitol. They have half the carbohydrates per gram that regular sugar has. So they can be useful in a diabetic diet but the total grams of carbohydrates has to be the deciding factor.
One side effect of the sugar alcohols is that they can cause gastric discomfort and may cause diarrhea. So I think it would be better to look for products that are sweetened with Splenda.
One note on the ice cream: I like the Bryers no sugar added ice cream. I like it much better for example than the Dryers which I think tastes soapy. Bryers has come out with a new version with is advertised as having 4 grams of carbs. Since an 8 ounce glass of milk has as many carbs are a slice of bread, I wondered how the manufacturer figured this one out! I compared the packages and guess what I discovered! There are 100 calories in a 1/2 cup serving of no sugar added and 130 calories in the 4 gr carbo version. The increase in calories comes from FAT. Now as someone who is an over weight type 2 diabetic I don't need 1/3 more calories in a 1/2 cup serving. So to say the least I am apalled. :-(
I'll let my husband eat the higher calorie version since he is a very thin diabetic and I am going to try and find the no sugar added version, which hopefully is still on the market.
