So I am back to home testing again. Over the weekend I've been paying VERY close attention to everything I'm eating in hopes of learning which foods to eliminate from my diet. So..yesterday for lunch I made myself a PJ sandwich on a kiaser (white) 2 hrs later..9.7..or 175. Went to my moms for dinner...she made pasta (white again) and flat bread, 2 hrs later...6.9 or 124. So I'm liking the pasta situation although I'm thinking it's a fluke. TODAY for dinner..again kiaser( I know..I know...but they are so soft) with 2 poached eggs and bacon, 2 hrs later...are you ready for this???? 4.7...or 84. HELLO????????? My fast number this morning was 6.1..or 109! I have no idea what is going on. Was the culpret yesterday the jam or peanut butter? I figured the bread. Same bread today gives me a lower number then my fast? AAAAAAAA..Just when I think I know something..I find out I know nothing. Any ideas???????????????????

From my experience peanut butter affects my blood sugar more than any jam or jelly does. So my guess would be the peanut butter is the culprit for your blood sugar. You may try using less or something to see if that helps out any since I have figured out just how much I can use before it makes my blood sugar higher than I want it to be when it comes time for me to check it. Just a suggestion though. Hope it helps you out some. Take care and do have a wonderful day!

I noticed the last time I home monitored, bread was a no no. I switched to whole wheat pitas. I never considered peanut butter.

The story gets weirder. I tested again an hr later...just to see how much lower I got. It was 8..or 144. I didn't eat a thing during that last hr. Wish I knew what was wrong with me.

It may be that the differences in bs that you are seeing has to do both with the amount of carbs and the amount of protein that you are eating. Your first lunch was peanut butter, jam and a roll. All three of these things have carbs in them - the jam mostly as sugars. There is some protein in peanut butter but not lots. Your second lunch only had carbs in the roll (the same as the day before), so you had less carbs than the day before. You also had more protein (I'm pretty sure) since you had two eggs and bacon. Protein helps slow the absorbtion of the carbs into your bloodstream - perhaps why you found your sugar still higher at 3 hours, though that I'm less sure of.

Anyway, you are on the right track. For each of us, different types of carbs are worse. For me, pasta is generally fine, but bread is a big no-no. You just need to keep playing and soon you'll figure it out. Just remember that other things affect your sugars too - like stress and exercise, so your numbers will not always be the same, even with the same foods. I eat exactly the same thing every day for breakfast (creature of habit that I am). My breakfast numbers vary from the 90-115 (and even occasionally as high as 130), though almost always in the 90's. This is just to illustrate that our bodies are always changing and you shouldn't get too worried about variability of 10-20 points with the same meal.

the first day depending on what kind of jam you were using...that could have raised the BG levels pretty fast. often the simpler the carb the faster your BG level raises.

The third day(I havent seen any mention of this yet), BUT fat will slow the rate the carbs affect your BG level(but due to other things like potential affects to cholesterol, etc) it is not a good slow down in the rate. that is one reason those who suffer lows are NOT advised to eat something with a lot of fat in it. I'm not sure but think it might also be that the fat slow down may be less predictable than what other types of slowdown foods do. I know my first thought was...well if fat slows down the increase then stuff like chocolate and fried foods should be good for us right? (That got a BIG NO in response to that question!!!)

The simpler the carb the faster the BG level raises(so something basically basically all sugar.....syrup, jams and jellies, etc(im talking the kind with no reduction of suguar or artificial sweetners , BUT also the faster it can later drop...and why they keep telling us for a low to eat something that will keep the BG level from nosediving too fast.

I vote for the jelly and the fats. I think it was the jelly that made your blood sugar go so high and it was the fats in the bacon and eggs that kept it from going to high after dinner. Try finding some of the reduced calories jelly if you must eat jelly. Jally is basicly fruit juice and sugar and it does a wonderful job of elevating your blood sugar.
