Ideas for breakfast protein?

I've been having some seriously out of whack numbers in the morning (well, out of whack for me, they run mid 160s to about 200, but usually the 160s or 170s) and I can't seem to get them to come down until lunch, and I am being forced to eat a snack just to bring the levels down.
Example:
Monday night @ bed: 115
Tuesday morning @ breakfast: 167
2 whole grain waffles (30g carb, 5 g protein, net carb 25g) + jam on one of them, about a tablespoon (approx. 3g) = 28g carb + 8 oz. milk (14g carb)
Tuesday AM (post bf): 165 (about 3 hours later) - did not get opportunity for a snack
Tuesday lunch: 125
Best times appear to be mid-day, and the morning numbers don't appear to be tied into the bedtime numbers (they're still high), so if anyone has any suggestions for protein heavy breakfasts, I'd appreciate it! I need to get my AM numbers under control (BTW, Mary Frances, I have increased the Lantus by a unit, so we'll have to wait a bit.)
How can anybody be enlightened, truth is after all so poorly lit.

If I counted correctly you had 72 grams of carbs for breakfast... that is a lot

Gabby, You may be dawning. How long is it between when you eat dinner and when you eat breakfast the next day? If it is more than 12 hours your liver starts making glucose from your fat cells. This is also called the dawn phenomenom. You are going very low in the middle of the night and your liver is trying to compensate. You actually would be better to have a snack at bedtime of no more than 15 grams of carbos and some protein. What this will do is keep your blood sugar from dipping too low in the middle of the night around 3-4AM. Ask your doctor if this will help. Do you ever test your blood sugar in the middle of the night? If you do, you may find it low but perhaps not low enough to wake you up.
They increased the Lantus yesterday to 18 units. I was really shocked, I expected it to only be increased two units. I almost refused to take it. It seems today that my hot flashes are much worse but my blood sugars have not been low. I did go to exercise today and hopefully that will help. I am going to quickly report any severe lows so that the CDE can adjust my doseage. I didn't sleep very well last night because I was so worried about what would happen. We will have to see how I adjust to this doseage. It didn't help that I forgot to put my 101 blood sugar reading in the little calculator and when you miss a reading you can't go back and put it in later. That's just the way it s set-up. they ran another A1C on me and it will be interesting to see how much further it has dropped.

I'll try the snack just before bed, and it is usually under 12 hours.

After I answered your posting I thought about your origninal question. I know your frustration about what to eat for breakfast. I have really bad cholesterol and lipids and so I am on Lipitor 40 mgm for that. So I try to stay out of the cheese, eggs, bacon and sausage. I am getting really tired of peanut butter and I hate cottage cheese. I do eat some of the artifical eggs. But breakfast has become really frustrating. I have been measuring my cereal to make sure that I don't have more than 30 grams of carbos and yet it still raises my blood sugar too much. But if I don't eat that amount I will be hypo before lunch.
So I don't know what to do. I asked for a referral back to the dietitian for meal planning help and I have to wait until July 8th before I can see her. That really shocked me. My response to this was "I really glad I have some idea about what I am doing and newly diagnosed." No wonder newly diagnosed diabetics feel lost!
