Hello everyone. I am hoping you can help me. I am looking for a recipe to make a birthday cake for my father who recently found out he is Diabetic. I am posting this here as I see there hasn't been alot of activity on your recipes section.

As for the cake recipe...it doesn't matter what flavour...chocolate, yellow cake, white cake....whatever.

Orange CakeIngredients:
1/3 cup reduced calorie margarine, melted
1/4 cup granulated brown sugar substitute
1 tsp. powdered sugar substitute
1 egg
1 1/4 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cinnamon
2/3 cup unsweetened orange juice
Vegetable cooking spray

Combine margarine, sugar substitutes and egg. Beat at high speed with an electric mixer for 2 minutes. Combine flour, baking powder, soda and cinnamon, stirring to blend. Add flour mixture to creamed mixture alternately with orange juice, beginning and ending with the flour. Beat at low speed after each addition. Spoon batter into an 8 inch square pan coated with cooking spray. Bake at 350 degrees for 25-30 minutes or until a toothpick comes out clean when inserted. Note: You can make two of these and layer them if you wish or bake them in round pans instead. 9 servings.

Applesauce-Spice CakeIngredients:
3 cups water
1 1/4 cups raisins
2 1/2 cups unsweetened applesauce
3 eggs, beaten
2 tablespoons powdered sugar substitute
1 cup vegetable oil
3 cups self-rising flour
3 tablespoons ground cinnamon
1/4 tsp. baking soda
2 tablespoons vanilla extract
cooking spray

Combine 2 1/2 cups water and raisins in a heavy pan and bring to a boil. Boil until the water evaporates or is absorbed by the raisins. (watch carefully) Remove from heat. Add applesauce, eggs, sugar substitute, oil, and remaining water. Stir to combine. Sift together flour, cinnamon and soda, then gradually add to the applesauce mixture with vanilla, stirring after each addition. Spoon batter into a 10 inch Bundt pan coated with cooking spray. Bake at 350 degrees for 40-45 minutes or until a toothpick inserted comes out clean. Cool in pan for 10 minutes; remove from pan and cool on rack. Frost as desired. Makes 28 slices.

Spring Fling Layered White Cake





Makes 18, 1/2 inch thick slices
Preparation Time: 45 min.
Bake Time: 20-25 min.








Cake

1 1/2 cups SPLENDA® Granular
3 3/4 cup Cake Flour
1 1/2 tsp. Baking Powder
1 tsp. Baking Soda
1/4 cup Sugar
2/3 cup Unsalted Butter, softened
7 Egg Whites
1 1/4 cups Buttermilk
1 Tbsp. Vanilla Extract
1/2 tsp. Almond Extract

Icing

1/2 cup Light Butter, softened
1 cup SPLENDA® Granular
1 lb. Fat-Free Cream Cheese
2 tsp. Vanilla Extract

Filling

3/4 cup Reduced Sugar Apricot Preserves
1 pint Strawberries, thinly sliced

  1. Preheat oven to 350°. Lightly spray two 9-inch cake pans with baking spray. Set aside.
  2. Make cake. Sift flour. Mix SPLENDA®:, flour, baking powder, baking soda and sugar together in a medium sized mixing bowl. Mix on low speed until ingredients are blended. Add softened butter. Mix on low speed until butter is very finely distributed (about 2-3 minutes).
  3. Add egg whites. Mix on low speed until incorporated. Scrape sides of bowl. Mix on medium-high speed 1-2 minutes or until batter is light and well blended. Scrape sides of bowl. Add buttermilk and extracts. Mix on medium speed until blended.
  4. Pour cake batter into prepared pans. Bake in preheated 350° oven 20-25 minutes or until edges of cake appear slightly dry. Allow cake to cool in pans 10-15 minutes. Remove from pans and cool on wire racks until ready to ice.
  5. Prepare Icing. Beat softened butter and SPLENDA®: briefly in a medium sized mixing bowl (until SPLENDA is just incorporated). Add cream cheese. Mix until lump free (about 1 min.) Scrape sides of bowl and add vanilla. Mix well.
  6. Assemble cake. Slice cooled cake layers in half. Using a serrated knife slice cakes in half horizontally, to create 4 cake layers.
  7. Place 1 cake layer on cake stand or plate. Spread 1/3 of the preserves over the cake layer. Top with 1/3 of the strawberries. Repeat process until all layers are assembled.*
  8. Ice cake.
*Decorating Tip: Professionals create flat cake tops by using the bottom layer of a cake for the top tier. This creates a nice flat surface for icing. The remaining cake bottom can be used as the first layer of the cake and the remaining 2 cake layers can be placed in the middle (top side down).
