I am trying to figure out which foods are OK and which i should steer clear of. I know what they are supposed to be after 1 1/2 to 2 hours, but am trying to figure out if some really make the numbers go up too high to start with.
Guess what i am trying to find out is what foods really do shoot it up fast and then drop fast versus those that slowly build and those that just raise the numbers a little bit and i dont have to worry about eating at all.
I had planned to try testing every half hour until 2 hours to find out if there are foods that i really need to just stay away from or if potatoes AND rice affect me the same way.
The only time i tried doing it though the one food i tried(may have been potatoes or pasta) and it went above 160 and then i realized it would then make my monitor log look like i had a bunch of too high readings.
As i understand it the key is that what we eat should not result in us being over 160 after 1 1/2 to 2 hours...BUT isnt that when the number is on the way down? Or is that the very highest the number should be(i mean even if you check it after only a half hour.
Sorry if this seems a little confused...but i keep wondering about this. In one way its maybe a little more of a question when i am trying to figure out how to fix a "balanced" or acceptable tuna salad. I love tuna salad, and in the past my tuna salad sandwiches always have a little sweet pickle relish, tuna, mayo, cheese and frozen peas. Have finally gotten used to using a whole wheat bread(its the sara lee delightful wheat so it is lower carb). Have also made the change to lower fat cheddar cheeses. When i make the tuna salad with pasta...i have added the pasta AND corn. well both peas are starchy veggies, and so that added to using pasta my be too much. am currently contemplating what other veggies sound suitable to add. I have already decided that I will add cherry or grape tomatoes. maybe peppers, and maybe some others. I would like the bulk up the tuna salad by adding veggies, so I AM getting more veggies a day. I have NO problem with getting my servings of fruit but have been struggling with the veggies.

So glad to see you are back with us and I hope you are doing well.
The basic answer to your question is this: 15 grams of carbohydrates, regardless of the source will raise your blood sugar 50 points. Some carbohydrates raise it quicker than others, depending upon how much fiber is attached to the carbohydrate source. Some diabetics are not able to tolerate potatoes or rice. Measure what you are eating to make sure there isn't portion creep.
Test your blood sugar two hours after eating. The logic behind this is that non-diabetic's blood sugar rises with eating and falls back to less than 140 two hours after eating. As the dietitian told me today, if your blood sugar starts elevated you don't want it to be more than 40 points higher than were you started. So if your pre-eating blood sugar is 120 you don't want your blood sugar to go higher than 160. Do remember the goal before eating now is 110 or less.

First time I read your message I was even more confused(that happens when i get migraines way to easy!!).
anyway as i think i understand it now....if your meal is 45-60 grs of carbs(what the dieticians said I should eat in a meal) then a meal with 60 carbs could potentially raise it up to as much as 200 points immediately BUT with good control it should then be down to 140 in 2 HOURS if i was a non diabetic...or given my doctors target(after I questioned the first set of numbers were too high)...she now says my highs should not be more than 160.
I confess i have at times gotten one of the oriental dinners from the one grocery store deli. i have always if i got it with white rice, maybe eaten at most 1/3 of the rice, usually more like 1/4 of it, and dump the rest. If i got something with fried rice, i would normally eat none of the rice that day and then have the fried rice for lunch the next day. but i had checked my numbers about 1/2 hour after i finished eating it one nite and at that point i think it was about 202 which scared the heck outa me. then at 2 hours after the meal i think it might have been 161...so it was a little high but real close to the target. But the fact it was a lot higher earlier really shook me up. That was when i realy started seriously wondering how high its permissable to get. so i guess the bottom line is probably in that 15 grms would raise the BG 50 points.
I know i havent been around here much lately....my puter being so slow and being on one all day at work have sorta frustrated me. Money wise i have some serious bills to get down....and a faster puter is one of those want things and not a necessity. But that said, it is almost 5 years old now. so not surprising its slow compared to the new ones.
