Need some help, please!

My husband made me a vegetable lasagna that I really love. I have no idea how many carbs are in a serving though and really need to find out since that is my best course for figuring out how much insuling I need to take. Does anybody have any clues at all in the serving size and carb ratio? I will be so very thankful in getting any help with this since I do love the lasanga so much, but tend to worry about not having a high blood sugar 2 hours after eating it. My delightful cookbook says that 1 cup (8 oz) of Lasagna is 2 carbs and 2 med-fat meat exchanges.
Have you tested your blood sugar two hours after eating this?

Yes, Mary Frances I have tested 2 hours after eating the vegetable lasanga with no meat at all and have found that I over estimate the amount of carbs in a serving or something since I tend to be either low or high. I want to get it right so that I can eat it more often and not worry so much about not knowing how many carbs in a serving. I do not think it takes anything from the meats at all since there is absolutely no meat in it at all due to that reason. I just know it has noodles, carrots, green beans, cauliflower, and broccoli in it just not tons of vegetables in it though just enough to consider it a single serving of vegetables though.
Oh, the things we have to do in order to maintain our blood sugars. LOL I seem to find lots of things I have to estimate these days, which I so wished that each company was made to put labels on their items so that people such as you and I have an idea of what is in a serving to base our decision on buying their item or not. Just like we get English muffin bread just your normal size bread slices for toast in the morning, but it has no label to it so I base it on the normal 15 grams of carbs a slice and that is easy to do at least only not all things we eat are that simple when you add ingredients into the mixture.
Well, at least I now I have a rough estimate of how many carbs are in a vegetable lasagna so I shall see if if it works out for me with my blood sugar 2 hours after eating some. At least I will really enjoy what I eat though. hehehe I appreciate your help with this since I feel so lost with some foods. Take care and have a terrific weekend!

Even though it is a vegetable Lasagna doesn't it have cheese in it? But it is true that manufactures slip in carbs in places where we would never think of them.
Please try to stay cool this long weekend. I can't believe that it is going to be close to 100 around here. It was so warm this evening I went for a two mile walk down town. My B/S was 99 when I got back. Saw lots of people that I know and visited with several merchants. It was fun, usually it is too windy and cold for me to do this.

No, I have not noticed any cheese in it. This vegetable lasagna does not have the usual tomato sause to it, but instead a creamy style sauce that is cream colored. A very different type of lasagna, which I think is why I love it so much.
No hot temperature here according to our weather men. Today we had a very windy day with a temperature of 42 this morning. They say we will be in the 70's at the highest with lots of chances of rain, which I know the rain is coming since I get very bad headaches just before it rains and we have only had a very slight not even noticeable sprit or rain here and there. We have even had to turn on the heater at night to stay warm, but you never know about the weather since the weather men are not always right. LOL
Wow, good for you walking a mile. That is absolutely out standing of you to do that, but I am so very thrilled to hear that you enjoyed it and that you got to visit with people you know. What even more fun to go into see what the merchants have for sale. Now that is my kind of walking, one that is very relaxing and good for you at the same time. Now you be sure to drink lots of water since it is going to be very hot there and do not over do it in the heat since that tends to lower blood sugar especially while on insulin at least from my own experiences. I like a white lasagna also. It has cheese and milk and flour and butter in the sauce. That is probably what is sabotagueing your blood sugar. Try measuring out a cup and see how you do. Does Clint make this from scratch or cook a pre-made one? I actually haven't seen any diabetic recipes for this type of lasagna. The developers of recipes for diabetics usually want to use the tomato version.

Clint makes it from scratch, which he is a fabulous cook and that is a good thing with me not being very good when it comes to cooking. I can only do oriental dishes well since that was all I ever was taught by my mother, which thankfully Clint does like the dishes I know how to make.
I will try measuring out a cup exactly to see how it goes with my blood sugar with the hope of me getting the carb amount correct. Good thing I write down all my blood sugar and when I have one that is off I put in what I ate in hopes of not having any problems again with a particular food.
Yes, most of the diabetic cookbooks call for the tomato sauce ones. Only I try to not eat to much tomato with my acid reflux, which tends to act up on me when I am pregnant and attemp to eat anything that is made from tomatoes. I so do love tomato sauces so much and they just do not care at all for me one bit. Take care and enjoy your weekend!
