How was your blood sugar? Did you have a good time?

I ate too much, even though I tried hard not to. So my blood sugar was a little too high but then it came down nicely. Walked over 3000 steps preparing dinner! Yesterday I went shopping and the crowds weren't too bad. I waited for the mad morning rush to be over and then had to walk the entire length of the shopping street because of where I found a parking place. Imagine my surprise to learn that I had walked over 5,000 steps! Didn't buy too much but I got some new decorations for my house and my front door. I am still tried from all the cooking on Thursday and so I took it easy today. Plus that I had some pizza for lunch and once again my blood sugar was a little too high. It has been quite a while since I had any pizza and I am already tired of turkey and so I was craving something different!

I hope everyone was successful in managing their blood sugar and had a really good time.

Did well on Thanksgiving...ended up at my friends' daughter's. Had a traditional Thanksgiving dinner instead of the Mexican food we'd planned on having. It was good, and my level was just fine when I got home. Had a piece of pumpkin pie with whipped cream when I got home, and it was 104 at the 2hr mark before I went to bed.

Today is another story! Bought a cookie assortment at Costco that I planned on splitting with a neighbor. Still plan to take them a plate of cookies. They have 6 kids. Anyway, had 6 little cookies and my level shot up to 177. That was after a meal of cottage cheese and a small orange. I screwed up!

Looks like we'll be hitting Garcia's Christmas Eve for Mexican food. My friend is vegetarian, and I plan to eat her spinich something. Anyway, already know that I won't eat the tortilla. Hopefully, they won't be embarrassed when I scoop it out of the tortilla.

Hope everyone had a great Thanksgiving.

WEll how did my Thanksgiving go!! Went really well.. My son Cameron and I we went and spent the night in a hotel the night before Thanksgiving. Went to my brothers the following day and had Thanksgiving there. I didnt do to bad. I ate Turkey and Ham a spoonful of mac and cheese, potatoes, broccoli rice, and then had about 1/3 cup of green pee salad.. I ate one bite literally one bite of a piece of cake and two bites of pecan pie. So I did really good. I also caught up with my step dad who I hadnt talked to in years.. And had a good time catching up with him.. I love his new wife.. she is so nice.. my mom passed away in 87 and he went on the rebound and She was not for him.. But this lady here is awesome.. they are both a type 2 diabetes and they understand the daily struggles. They also talked to me about ways to improve my eating healthier. like really I should never have candy or real cokes only when sugar is way low. I did really really good yesterday on eating I have to eat healthy..its a must.. bye for now Melody

Cheryl,

Can you post your recipe in the recipe folder?

I am craving pumpkin. My nephew made pumpkin soup using a diabetic recipe but it had shallots in it and since I am allergic to onions I couldn't eat any of it. Since we had pumpkin soup my sister made an apple dessert. I have since found a pumpkin custard recipe that I may make but it has 26 grams of carbs per serving. So you can understand why

Maryfrances,
I have a winning pumpkin recipe that is very easy. It has 38g of carb but also 8 grams of fiber, so it is healthy, filling and delicious. It also freezes well.

Spicy Pumpkin Soup:

Makes 6 servings

15 ounces canned pumpkin (not spiced).
1 can (19 ounces) garbanzo beans drained
1 C corn (canned, drained)
4 C chicken broth
3/4 C salsa
1 T canola oil
1 T each minced garlic and chili powder

Put oil in medium soup pot. Saute garlic and chili powder in oil. Add chicken broth, corn, garbanzo beans, and pumpkin. Stir to mix. Add 3/4 cup salsa. Bring mixture to boil. Turn down and simmer for 30 minutes to mix flavors.

Serve topped with grated low-fat cheddar cheese or a teaspoon of nonfat sour cream.
