Eat to Beat Diabetes Diet

I've just been looking at the recipes that are the Eat to Beat Diabetes Diet. http://totalhealth.ivillage.com/eat-beat-diabetes-diet.print.html?pageNum=3
If I followed this diet I would have high blood glucose readings that wud result in complications. For instance it has bread, pasta and worst of all baked potato which is known to have the highest carb conent of all.
I really am apalled at these recipes. Don't the people who wrote them realise that ALL carbs convert into blood glucose, even complex carbs! I'm sure I can't be the only one that gets a reading of over 8 (144) two hours after a meal when I eat bread, potatoes, pasta and so on. The only time I eat those type of carbs is as part of a special meal/treat or if I know I'm goig to be exercising afterwards which always brings glucose down to 6.7 (126) or below two hours after a meal.
Obviously we need carbohydrates so I get my carbs from greens. Pulses are also not a very good option except maybe for red kidney beans.
The question I have is, do others here eat all of the above rice, potatoes, pasta etc and if they do, do they get the recommended range of 4.4 - 6.7 (80 - 120) two hours after eating?
Or am I an unfortunate freak? :-)
