Hello I'm Connie and I was recently diagnosed with Type 2 Diabetes.  I have been reading on what to eat, how much to eat..but I still get confused.  My dr gave me a print out of the diabetic food pyramid.  I have been trying to follow that.  What I need answers to is...what kind of snacks to eat between meals?  I have been eating carrots, reduced fat/sodium ritz crackers w/cheese (the 2% milk kind), sugar free jello.  I just want a little bit more variety.  I dont really like yogurt so that's out of the question.  Although i will eat 1 occasionally.  I guess I just need some ideas.

There's a lot you can have...

celery with cream cheese or peanut butter
apple slices with cinnamon
apple slices with peanut butter
a small pear (pears go good with some cheeses as well if you like)
a handful of nuts (maybe mix several different kinds for a trail mix kind of snack - be careful with dried fruits though because they are concentrated fructose)
a small mixed salad (dark green leafies, a couple cherry tomatoes, some cuke slices, avocado, etc with a low fat/no sugar or HFCS dressing - personally, I just drizzle my salads with a bit of balsamic vinegar straight up)
try Greek yogurt (like Chobani or Fage, both available in many grocery stores) - they filter out the whey which gives yogurt that sharp taste - I like to take plain fat free Fage and add a sprinkle of cinnamon and a spoonful of agave syrup (low glycemic but still sugar)
Sometimes, two low fat cinnamon grahams with some peanut butter can be an okay snack
Check out the "diet food" aisle of your grocery store and look for the Atkins-type snack bars, most of them are low carb. Note: they usually use sugar alcohols like sorbitol (anything with an -itol ending is a sugar alcohol. It is NOT alcohol as in beer and vodka though) and sugar alcohols can cause digestive issues in some people.

For any snack (or any meal), what works for you depends on you - so test 2 hours after a snack to see how that particular snack combination works for you.
