Hi All, We watched a demonstartion at a large fair this weekend for a Vitamix machine (i've wanted one for years). Do you know if it would be helpful to a diabetic diet to be able to make smoothies, ice cream, soups, etc. using whole vegtables and fruit or would it create problems. They actually made icecream using whole carrots, chunks of raw cabbage, zucchini, powdered non-fat dry milk, ice, and a pice of fruit. It was so yummy!

I suppose the answer is it depends...can you now handle carrot juice, diced or grated zucchini, etc without spikes? Can you handle smoothies now (yogurt, milk, etc blended up with fruit)? If having a smoothie now (a regular blender can make smoothies) spikes your blood sugar, don't count on this thing to be any better. If having 4 oz of carrot juice now spikes things, then this won't be any better. On the other hand, if those things are good for you but you don't do them often because it's a pain in the butt, then sure, try it. Did you test after that yummy ice cream they made? Did your blood sugar stay about normal or was it higher than usual (given the rest of the circumstances)?
(BTW there really isn't a "diabetic diet" per se - it's about keeping an eye on the type and quantity of carbs you consume)

Most fruit is pretty high in carbs.
DH and I eat yogurt and blueberries for lunch almost every day.
