My favs -used to be- mashed potatoes (no gravy), jellied cranberry sauce, and candied sweet potatoes, plus mom's sausage stuffing.

Now, we do roasted root veggies (sweet potatoes, squash, celeriac, carrots, maybe beets as well) with a mix of sweet and savory seasonings which actually tastes really good (cinnamon, ginger, garlic for example). Yummy and less glycemic impact, plus I eat less of it because it seems more filling (more chewing, doesn't just slide right on down), more fiber. I still like the stuffing but we don't do sausage in it anymore - bread cubes, celery, apples, diced pecans, onion and sometimes we'll add Quorn crumbles (a non-soy meat-substitute).

This year I'm going to try making a pumpkin pie using a recipe for a crushed pecan crust instead of a flour crust - cuts the carbs way down and I'm going to use Splenda maybe or agave syrup (lower glycemically than sugar) for the sweetening.

I would like to know about the pumpkin pie also because that is one thing that I really miss.

The recipe is in a carb conscious vegetarian cookbook but I've also seen similar recipes online at carb counting type websites. http://lowcarbdiets.about.com/od/desserts/r/pecancrust.htm is one such recipe - crushed pecans, butter, and sweetener of choice (the recipe's author likes liquid Splenda). It works about the same as a graham cracker crust. The nutrition info on the recipe at the website is:
Whole crust is 4.5 grams effective carbohydrate plus 10.5 grams fiber, 10 grams of protein, 101 grams fat, 950 calories
So, if you divide that all up into 8 slices of pie, you've got a little over 100 calories, 13 grams fat, 1 gram protein, 1 gram fiber, and 1/2 gram "effective" carbs (I'm guessing that's total carbs - fiber)

I figure it's worth a try - I plan to use either Splenda or agave syrup in the pumpkin mix itself. Partially depends on what sweetener I use in the crust - too much Splenda makes me feel odd. I'll probably look at the quantities involved and use Splenda in one part of the pie and agave in the other. Might use the agave in the crust since the cinnamon etc in the pie filling would help mask the Splenda taste.

Oh it's green beans all the way for me. Totally unhealthy greenbeans cooked in bacon grease and salt. I can almost smell them. ;)
