My DH and I eat the old fashioned kind of oatmeal, sweetened with Splenda, and about 1/4 cup of dried Craisins and 1/2 teaspoon of Vanilla extract for breakfast.

Julie,
The clue is that she needs protein with the carbs to slow the absorption of the carbs down. I was going to suggest that she see a dietitian for meal planning help. She really needs this because there isn't any reason for her to feel hungry after she eats. We diabetics can eat a very interesting menu.
In diabetes we have a saying, which is "if its white don't bite." This mean no white flur, rice, sugar or potatoes. These are simple carbs and they elevate the blood sugar very quickly because they don't have enough fiber in them.
I suggest that you go to the American Diabetes Association website and look at their recipes and cookbooks. She needs a good diabetic cookbook to help her understand what she is supposed to be doing. I also like the Joslin Diabetes site which is part of Harvard University. Both of these web sites have sections for the newly diagnosed.
Have you looked at the Diabetes information here at iVillage? They have an article posted entitled "Eating to Beat Diabetes." Read it and Print it out for your mom. There are whole bunch of articles that will help both of you there.
Diabetes education is so important and it is often neglected which is a shame. Check with the local hospital where your parents live because they may have some community education classes which are free.
One other nurticuitical which doesn't help some diabetics, especially early in the disease, is cinnamon. There are some studies which indicated that cinnamon will help lower blood sugars. Dosage is 1 tsp. She might try that with her cereal.
One of the things that you will find out is that not all diabetics react to the same thing the same way. So it is hard to tell what will help one and not help another. But we do have many diabetic recipes on this board and feel free to look at them and
Trust me!! We all learn something about this disease every day. Here is the link that I suggested to you: http://yourtotalhealth.ivillage.com/diabetes-endocrine
There is a lot of stuff there and it is very readable.

Sounds like she needs to make sure she gets protein and fiber along with the fruit/veggies. For instance, an apple sliced up with some good (no sugar or HFCS added) peanut butter makes a great snack. Portions are a big thing too - one portion is one MEDIUM apple, not the huge red delicious things that are 2 or 3 per pound. My general rule of thumb (to make shopping simple) is that anything that I cannot easily get my hand around like a ball is too big. If I can comfortably hold it, that's good.
