Now I'm getting cranky!

So I went to the endo last month and my TSH was 1.248. He asked how I was feeling and I told him that my hair wasn't falling out as fast, I had more energy, less PMS, less migraines, no more canker sores, but unfortunately my hair and face have gotten oily again. So why am I so cranky? Inspite of all my hard work, following of diets and exercise, I have gained another 5 pounds. That's a total of 30 in 18 months. I am at a complete loss for an explanation. He just said that I should see the dietician. So off I went to the dietician who is also the diabetic counselor. (I am not diabetic) I told her that I have Hashimotos, IBS, Chronic Kidney stones and am not supposed to have any seeded foods, stay away from a lot of veggies (from the gastro), cut calcium and protien (from the urologist), and cut out carbs (from the endo) and she gave me the basic diabetic exchange diet, told me to eat higher fiber foods with whole grains and seeds, and make sure I get plenty of calcium.
I cried!
This morning my daughters school called and said they needed a substitute for an aide in special ed, and I said sure. Then I went to my closet.
Then I cried.
I finally got to the school, with pants too tight and puffy eyes.
I can't do this anymore. I don't know what I'm doing wrong. First I ate too much, then I ate too little, now I try to eat balanced and I keep gaining.

Yesterday I had a McD's breakfast burrito for breakfast, a small package of beef jerkey for lunch, and salad for afternoon snack. Dinner was 2 slices of pizza. For bedtime snack I had a brownie bite. The hostess kind that you get three in a package and I ate one and hubby ate the other two. Total calories for yesterday was 1475.
Both yesterday and today I walked a mile on the treadmill at 3.6 mph, 4.5 incline. yesterday I parked pretty far away from the campus and walked quickly to class.
That's my usual type of meals.
I went to www.room42.com and guessed at all your stuff (age, height, weight) !!! Here's what came up:

The first number, your Basal Caloric Rate is the number of calories you need at a bare minimum, with no activity. It's basically the number of calories that keeps your body going before you even get out of bed!
Now, if you weigh more than I've guess, you'll actually need more calories in both the Basal and Active rates. Age makes very little difference. And height probably doesn't make too much of a difference either. Do you see your Active Caloric Rate? That's the estimated number of calories that you can eat to maintain your weight. So you're about 300 to 400 calories below that and gaining!! That tells me that you aren't eating enough to lose weight. Your body is holding on to every calorie AND slowing down your metabolism so that you are actually gaining weight. It's working against you at this point. As if you didn't know!
3500 equals a pound. So if you want to lose a pound a week - divide 3500 by 7 days and you get 500 calories a day to cut from your total of 1853. But it's better to get about 250 calories burned through exercise, which you can do with 30 minutes of walking a day, even if i'ts broken up into 10 minute segments, and cut 250 calories from your food.
So if you ate about 1600 calories a day and did some moderate exercise, like you're doing, then you should lose about a pound a week and re-train your metabolism. Eat about 400 calories per meal and either 4 meals or 3 meals and 2 snacks. 400 calories for each of the three meals, and 200 calories for each of the 2 snacks. That will keep your metabolism running all day long and also teach your body that it's going to get regular calories to run on so it doesn't need to conserve it's calories anymore.
Keep you meals simple and easy and always have some healthy snacks and food on hand. If you want me to go through the meals you listed, I'd be happy to give you some alternate suggestions. Also here's a link to Kathy Smith's Jump Start plan - it's a very healthy, well-balanced plan that's flexible and easy to follow. The first 5 days are designed to give your metabolism a boost and cut out some starchy carbs at meals 1 and 4. You can pick foods that you like from different categories. It's very easy to follow. And it actually sets up a pretty good plan taht you can follow for life. It might take a little bit of planning to get started but otherwise, it's no big deal. And it's about 1500 calories a day so you could even add a few calories if you wanted to.
I have to wonder at a dietician that includes the very things you told her you couldn't eat!!! I think it makes everything she says suspect after that, don't you?
I think you can definitely lose weight with a little planning for your meals and snacks. What do you think??? Cathy :)
