Tuesday's Dinner will be?

Tonight I think we'll have hamburgers, northern beans for a change of beans lol, and perhaps beets with a dab of sour cream on them. :)

>>I just write it on a piece of paper and put it on the refrigerator :)

**Ahh I remember those days This last fridge we have won't hold magnets, lol so that's why that *write and wipe* little board was so neat.

Hope our next fridge will hold magnets. :) Lol, I miss all that stuff I kept on the door.

>>maybe a southwestern chicken wrap. or a grouper sandwich

**Oh that grouper sandwich sounds good! Grouper doesn't do well coming here so we can't get it. I had my first taste of it in FL and it was so good! Now it's definitely on the agenda when I visit. :)

>>NOTHING fried, altho it is so tempting when I have all those fried things just staring at me

Gosh, I hadn't thought of that but man, I bet it is. Yup, I know you'll be strong! And if you have the grouper, enjoy it doubly for me. :)

SO has a wonderful Mexican Hotdish recipe, that is not too bad for you if you use "low-fat" ingredients. So I'm making that tonight. I also use venison whenever I can in place of beef. The recipe is below if anyone would like to try it sometime!

Have a great day!

-Hillary

Mexican Hotdish

9X13 casserole pan - sprayed

1.5 lbs ground beef-browned and drained

1 can cream mushroom soup

1 small container fat-free sour cream

1 pkg small soft tortilla shells

16oz bag low-fat shredded cheddar or taco cheese

Doritos

Mix soup in with ground beef. Layer 1: lay 2 tortilla shells on bottom of pan (cut to fit pan). Spread thin layer of sour cream on top. Add layer of beef mixture. Then add layer of shredded cheese and then crushed Doritos. Repeat layers once more. Bake at 350 for about 30 minutes. Serves 6-8
