Sometimes when I am feeling lazy I pan fry skinned chicken breasts and just add a jar of stir fry sauce or curry sauce etc. Some of these depending on the brand you buy can taste great especially the Indian ones and if you read the labels you can buy relatively "good for you" ones as well. Not every night, but it is quick and easy. I also use a rice cooker so cook up large quantities of rice and freeze it. Microwaves up really well and saves a lot of washing up and time. (last night was Satay with extra peanuts) Hilary

Hey Hil,

I like that rice tip. I've never frozen cooked rice before....duh!

Now I'm wondering why I haven't, lol. Also thanks for the Curry tips. it really doesn't seem like here in the midwest we think of curry often. I've probably eaten more in CA(great Indian restaurants) than here. Enjoy!

Finally figured out what for dh. I don't want to go out in this heat (103 right now) so found some pork cutlets in the freezer. He'll have that with rice (gonna freeze some too lol) and green beans. He always has to have apple sauce with it it seems, lol.

For me, think I'll have a plain omelet with salsa and a 1/4 avacado with sliced tomatoes. Toast with it too. :)
