Morning all :)

Is it just me or are the weeks starting to just zoom by?

Around here, the grocery sale fliers come out and the weekend sales begin!

What will your dinner be and will any of it come from those advertised sales?

The guys are going fishing so I'm going to have a TV dinner.

Don't feel like cooking too much tonight, so we're just having burgers and beans (again). I buy ground elk burgers, which are very good - and very healthy. And geez, I'm sure getting my fiber this week, huh! lol

Thursday's dinner:

Mexican chicken salad: shredded lettuce, green cabbage, tomatoes, onions, cilantro with lowfat smoked chipolte dressing and 4oz grilled chicken, whole-wheat mini-burritos plus fat free refried pinto beans topped with cheese (1 T) and salsa. The ww tortillas are AWESOME!!! Only 50 cals each, 5 g protein, 12 g carb, 9g FIBER!!!!!!! Very filling and LOW CALORIE meal : )

I have made wrap sandwiches in those whole wheat tortillas.They are good--and lo-carb-compared to bread.Your recipe has me drooling!Gotta try it.what brand is the Chipolte dressing?? mel

**Well Mel, you sure make them sound good! It's great you have some in the freezer too! :) Sons dinner sounds pretty good too. They don't care much for the veggie burgers?

Hi Mel,

unfortunately I haven't found a name brand chipotle dressing, so I make my own. Not as convenient but well worth it. I only use 2T dressing (on the side, of course!). Here's how I make it, it comes out a nice peachy color:

Yield: 2 cups



4 cl Garlic, quartered

1/2 c Chopped cilantro

1 ea Juice of lime

1 ts Honey

1/4 ts Black pepper

1/4 ts White pepper

1 ea Chile chipotle en adobo

1/2 ts Adobo sauce (from the canned

(chiles)

1 c Low-fat or fat-free Mayonnaise



Add all ingredients, except the mayonnaise, to the

container of a blender. Blend on low speed, stirring

occasionally with a wooden spoon until blended. Add

mayonnaise. Blend on low speed stirring occasionally

until mixture is smoth and creamy, about 3 minutes.

Serve immediately or refrigerate until served.
