**That's the truth even though I still do roast pork in the Weber BBQ for the crackle!!! YUM!! A favourite.

We used to always have homemade gravy. Wonderful. Now, even I use a packet!! HA! Hil

For the baked potato topping, use a small carton of extra light sour cream, mixed with one heaped tablespoon of fruit chutney and a teaspoon of curry powder, and chopped shallots on top mainly for decoration. It tastes great. Hilary

**It really took me awhile to get used to it lol. I'd always overbuy as if the kids were still here. I hope you did get something good for dinner tonight Hugs.

OK :)

1 box elbow macaroni (I use Muellers)

1 Brick low fat mild yellow cheddar (or the non low-fat kind vbg)

1 brick white sharp cheese (low-fat or regular)

1 brick white or yellow extra sharp cheese (I usually can't get this in low-fat)

It does taste better if at least one of the cheeses is regular

Grate the cheese

(sometimes this is too much depending on what size I can get so I grate only 1/2 of each until I know)

Cook the macaroni al dente

spray glass or metal rectangular pan with spray olive oil or PAM

put a layer of macaroni on bottom of pan (I sprinkle a little salt on the macs)

sprinkle on a layer of cheese (a combo of all 3 cheeses)

keep layering until pan is full--ending with lots of cheese

Pour skim milk into pan until it slightly covers the last layer of macaroni

Put into an oven at 375 degrees and bake until cheese is golden brown (sometimes 425 degrees is better--depends on the oven:))

Once it is done let it set for about 5 minutes to settle in.

This is going to be so yummy!! I can't wait - - and I WILL do one of the cheeses Not low-fat....Gotta splurge on Mac & Cheese.
