Well up here cheese is cut and pre-wrapped in a chunk--usually rectangular like a small 'brick'--so you can grate it or cube it yourself. The weight varies which is why I only grate half at a time 'cause sometimes the 'bricks' are larger than ususal. I just cover the layer of macs with the cheese so you can barely see the macs (the more cheese the better)on each layer. i tend to make too much--but then we have leftovers (VBEG)!!! and it is always better the second go rond
